My son & I always watched your wonderful videos together ❤. He passed away a year ago and I haven’t been able to bring myself together enough to do anything we used to do together until your video today 😢. It is crazy on what triggers me since he has passed away! So I watched my favorite channel Food Wishes and cried all the way through it. Thank you for being a good memory that my son and I shared.

En México se suelen disfrutar en cualquier día, acompañadas del café mañanero o chocolate caliente.
Su sabor tradicional suele ser Chocolate o Vainilla pero eso no le quita merito a lo deliciosas que se ven.

These are great! Just one thing: conchas traditionally do not have a hard sugar topping. It’s supposed to be soft with a risk of falling off when you eat it which can be messy but deliciously fun! Thanks for the video! 🎉

I came here to say just that. I’ve had some topping be just the slightest bit crust-like toasty, but never crunchy. You said it so nicely. I hope nobody is giving him hell about it though. He of course was putting his own spin on it and I’m sure it was delicious.

Thumbs up on the not using butter (though we like it at times in other things). Our Abuelas and Mamas usually used unrefined Lard instead of vegetable shortenings like Crisco.
Fortunately for my belly (but not blood sugar levels) we have wonderful Mexican bakeries (and a couple ofPaleterias) here in Northeast Ohio. Besides the Dulce one also makes my favorite (and ohhhh so wonderful) savory Puebla Cemita rolls 😋😋😍😍🤩🤩🤤🤤😋😋😋😋😋😋

Chef John, A Delight as always. I'm a US expat living in Oaxaca Mexico. I've been here since 1987 and in the 90s, after obtaining a series of Mexican cookbooks I decided to try to make conchas. I'm fascinated by what goes on in the mind of a cook when executing a recipe. I find for me, I ALWAYS have to have the recipe in front of me, otherwise there's no telling what might go wrong or be left out, even if I'm going to wildly change the recipe I need to note that down in the right hand margin of the recipe. I think that cooking is such a complex process that's it's very easy to not only get distracted, but do things you just KNOW aren't going to do any good 🤣. You asked why did I do that? I think that's the working explaination. Thank you for your very amusing expose on what goes through our minds while trying to make something delicious. All the best Jim Oaxaca .
