    Using pure vinegar to pickle our veggies doesn’t leave room for the lactic acid bacteria to develop. Skipping steps to give us a sour product but without life. Fermenting, on the other hand allows the lactic acid bacteria to develop as well as become sour and preserves itself through this acid Ph drop while staying alive!
