    I made “sudachi soba” (cold soba noodles topped with thin slices of "sudachi"). Sudachi is a Japanese citrus which is available in August and September. It is rarely eaten as a fruit (too sour), but it is often used in Japanese cuisine. The noodle soup is very refreshing with the citrus juice.
    I also made the noodle soup base ("mentsuyu") . Mentsuyu is a very handy and common condiment in Japan. It is used to make soup or dipping sauce of soba/udon noodles, as well as to season other dishes. In Japan, most people buy it rather than making it at home but if your Asian supermarkets do not have pre-made mentsuyu, try to make it on your own. It is as good as - or even better than- the commercial mentsuyu.
    ■Ingredients of Mentsuyu■
    200ml mirin
    200ml soy sauce
    100ml sake
    10g kombu (dried kelp)
    20g (or more) bonito flakes
    ■Ingredients of sudachi soba■
    [2 servings]
    240 fresh soba noodles
    8 sudachi
    myoga (sliced)
    green onion (sliced)
    You may substitute sudachi with (organic) lime.
    If myoga is not available, just use chopped green onion.
    【Noodle soup】
    100ml mentsuyu
    300ml water
    sudachi juice (squeeze the both ends of sudachi)

    thanks for the ideas about how to use the bonito flakes! I do want to make furikake. Also could one use yuzu in place of the sudzchi?
