    Just a comment on stuffing the peppers... I live in area where this food is a way of life and I love it!! I learned that you can put the cheese/capocolli etc in a food processor and chop it all up (add olive oil) to keep it loose and spoon it into the pepper! Much easier!

    When you put them in the vinegar did you refrigerate them week or leave them out?

    Just found your video and I can't wait to try it! Getting ready to pick our cherry peppers this weekend. We should have enough to do a couple jars.

    Great video,.waiting a few.more weeks until my.peppers are ready.to pick!just a few questions... Do you use just regular white vinegar? And do you have to refrigerate during the week in vinegar? And do.you have to refrigerate after stuffing and adding the oil?

      Hi Justin,
      First of all thanks for watching.
      Any white vinegar can be used as long as it is at least 5% acidity.
      You do not have to refrigerate during the week in the vinegar.
      They do not have to be stored in a refrigerator after you stuff, we keep ours in the cool cellar, not sure how long they will keep, but we've had ours for 10 months before & they were still good.
      Still eating ours from last season, packed on 10/26/19.

    Hi, great vid… so basically after stuffing the peppers you fill with seasonings and oil to top and then it looks like your sanitizing the lid, is that right and is that mandatory?
    And the oil keeps them preserved?

    Hello, thank you so much for the step by step on this recipe and the tip on what oil to use. I am in the process of trying it out now and have a question. Once the peppers are stuffed and jarred, do you need to boil them again? Or, are the peppers to just sit in the oil for another week, then they are ready to eat? Thank you again!!

      Hi Lisa, after you stuff the peppers that were in 5% white vinegar for a week, you just pour in the oil & wait a week or so (if you can wait), then enjoy. We are still eating last years that we stuffed on 10/26. We keep them in a cool place, on shelves in the basement, then place a jar in the refrigerator before eating. we've been doing this for 3-4 years, no issues yet. Enjoy your peppers.

    Just found your video. Very informative, thank you! Have a big crop growing now with the purpose of stuffing and canning. I just wanted to be sure that these will last several months without refrigeration? Meaning, refrigeration only required after opening.

      Hi Jim, the last batch we made, lasted at least 6 mo on our shelf in the basement & they were just fine, enjoy!

      These are exactly how my dad made them when I was growing up! Do you refrigerate them during the week that they soak in vinegar or leave them out? Thanks!!!!

    How long will they last unopened and stored properly? No need for water bathing or anything like that?

    Nice video and I just want to say that I use EVOO and then I place them in my wine cooler at 55 degrees and they don't congile. I like the idea of using the mix though and will try it.

    Just stuffed my cherry peppers , had them in vinegar for about three weeks , was that too long Ray ? Thanks guys for ur video, your a great couple 😀happy days

      The longest I went was 2 weeks & they were fine.

    We did ours and some of the jars seemed to not seal air tight can I or do I just redo just ok cuz in oil?

      Hi Nancy, the jars do not seal as in a hot bath, if you soaked the peppers in vinegar before you stuffed, you should be just fine. If they smell funny, or it gets cloudy, these would be a sign that they went bad, discard. Have a great day, Ray

    You don’t process the process them in a bathwater or anything they’re good on the shelf

      Just follow the video, the vinegar is what does the trick, we've kept them a year or more on the shelf.
