I looked up the menu for Blackworth in Litiz and that really helps identify what you're cooking. Although, the menu is seasonal, so it changes some. I'm enjoying the videos, man.

the advantage is in the flavor. this definitely isn’t the most efficient way of cooking. it’s what make high volume difficult for us. there’s only so much space to cook. but we still pump out 300+ covers on a good saturday night

Do you just make your orders as they come in or do you have to coordinate with other sections? Say if half the table order steaks and half your octopus dish, how do you ensure that tables dishes are all ready at the same time. Great videos man, enjoy them!

I love the way you deglaze the skillet and give it the quick wipe down for its next use.

that’s all up to our expo. for example they fire the octopus when the stakes are supposed to be ready. then we meet in the window
