  • There is truly something special that happens when quality meat, a few simple ingredients, and a roaring fire meet. This exceptional whole pig was coated with aromatic chilli and garlic oil and seasoned only with sea salt. Roasted for a few hours until deliciously tender and juicy. The skin was perfectly rendered, crispy, and crackling! This is a MUST-try recipe!
    Recipe
    ∙ 22kg Whole Pig
    ∙ Sea salt about 250g

    Broccoli salad
    ∙ 2 punnets fresh broccoli
    ∙ ½ cup sour cream
    ∙ 1 cup Mayonnaise
    ∙ 1 bell pepper
    ∙ Feta cheese
    Three bean salad
    ∙ 2 cans baked beans
    ∙ 2 cans butter beans(drained)
    ∙ 2 cans green beans(drained)
    ∙ 1 tablespoon onion powder
    ∙ 1 teaspoon garlic flakes
    ∙ ½ cup white vinegar
    ∙ ¼ cup sugar
    ∙ 1 bell pepper
    ∙ ½ tablespoon celery salt
    ∙ ¼ cup olive oil

    How many pound pig was that? What was internal temperature to know it was cooked? How did you get that skin to crisp? What did you use to rub or marinate the skin with? Looks delicious, thank you for sharing. ❤👍👍

      Hi! It was a 22kg(48lbs) pig. I did not check the internal temp-cooked it until the meat was firm, juicy, and cooked. I rub the pig with homemade chilli oil and only salt.
      Was really delicious!

    WRONG PROCEDURE OF ROASTING. THE FIRE/HEAT SHOULD NOT BE DIRECTLY U DERNEATH THE BODY OF THE PIG SO THAT THE SKIN BE ROASTED EQUALLY AND NO SPOTS THAT ARE SO MUCH BURNED ( THE BLACK SPOTS )
