USSC 410 Leads A Cane Train Up US 27

Sugar cane train I found on Highway 27 north of Moore Haven heading towards Lake Placid. Ex Southern GP50, since rebuilt, in the lead.

Are the sugarcane stalks ground up and put into the hoppers for transport?? Or how do the railroads move the commodity??
I recall in 1989 being on Maui for my honeymoon and seeing small gauge factory trains moving while stalks on flatbeds with staves around the car (kind of like hauling timber) holding the sugarcane in. But this was from the fields to the processing plant.
