- This walnut rugelach are soft, crumbly and flaky. Rugelach (a.k.a. ‘rogaliki’) are the perfect cookies and are surprisingly easy to make (the cookie dough will surprise you)!

Ingredients for Walnut Rugelach Recipe:
►1 cup (16 Tbsp) unsalted butter, melted (not hot)
►1 cup (8oz) warm milk (2% or whole milk)
►4 cups (500 grams) all-purpose flour, measured correctly*
►3/4 Tbsp active dry yeast
Ingredients for Rugelach Filling/ Topping:
►10 oz apricot preserves
►1 cup Fisher walnuts**
►3/4 cup dried cranberries/ craisins, dried cherries, currants, or golden raisins
►2 Tbsp granulated sugar
►1 tsp ground cinnamon
►Powdered sugar to generously dust cookies

Just made it for the first time, very simple. Thank you for the recipe. I needed more amount of walnuts for filling. Also, I skipped the raising process and put it straight for 350F. My husband loved it too. :)

Hi, so these are almost like my Aunt used to make but without the powdered sugar. She used cinnamon sugar on top. I wanted to ask and make sure if i was right, if i wanted to make them with a cinnamon sugar topping, would I brush them with melted butter and sprinkle on the sugar cinnamon mixture?
Feel free to experiment and try it. I have never tried that but would love to know how it goes.

Hi, so I made these today and they didn't come out exactly like they should have but that's me. I am Jewish and grew up with Rugelach. Your flavors are of one of many that I remember; however, we didn't put on powdered sugar. In remembering when they were all cooked and out of the oven and thinking now, the Rugelachs were covered on top with speckled sugar. I don't really remember if it was regular sugar that was put on top of melted butter to hold the sugar on top, but wanted to ask you, if I wanted to try that, how would I go about it since they're already cooked and put in the fridge and freezer?
I haven’t tested freezing that but here is what one of our readers wrote “Made these awhile ago and my husband loved them - to save time wondering if I could devide dough and then roll out into rectangle place filling onto dough and roll them - like a cake roll and cut (instead of triangles) and they do freeze well.” I hope that helps.

Once it is rolled out, there is no need to rest it 😬

Hi Cresty, I'm not sure what you mean by PH, but yes you do need to rest the dough and let it rise in a warm (100˚F) oven for 30-45 minutes, or at room temperature which takes longer (up to 2 hours), depending on how warm your room is.
Can we freeze this cookie?
It it okay if only add nuts without cranberries?
Had trouble getting them to rise a bit before baking . First time I've ever mixed the yeast with dry ingredients . Should i have added the yeast to the warm milk and let it sit a bit and activate before adding to rest of ingredients ? Despite not rising they still tasted great :-)

I would add a teaspoon of sugar to dry ingredients to activate yeast
Looks really good..but shouldnt the active dry yeast proof in warm liquid before adding?thx..cuz ive mixed dry yeast in flour before proofing and tge yeast didnt dissolve that well...cant wait to try it out

They are not like bread at all in consistency. These cookies have unique consistency. I hope you'll give them a try 😀

How do I keep them from opening during baking?
Make sure to roll them with the points facing down to a parchment-lined baking sheet. Don’t roll them too loosely or overfill them or they won’t have a nice seal. Press down the edges a bit to help tighten the seal

Followed the recipe exactly, but unfortunately mine did not turn out soft and flaky like yours in the video. Mine turned out crunchy.
Egg wash and sprinkle with granulated sugar before baking. And dump all the flour at once; it's still gradually mixed in and much less mess.

Please give flour measurements as weight. A cup can vary as much as 1 1/2 oz depending on how it is measured
