Master Guo didn't hammer the carbon into the blade but didn't bother to grind off the forge scale after tempering.
I was surprised Master Guo tempered the spring-steel blades to 61 HRC. Spring-steel blades tempered to 55 to 58 HRCs are mostly used in abusive environment.

@@cookingwithcleavers6842 Unfortunately the ones on chefs knives to go have the new logo. I'm trying to get one with the old logo haha. So if you could somehow manage to find one that'd be amazing!
