Hey there! Yes, unfortunately Facebook not allowing you to delete pre-filled questions anymore is a new thing Facebook changed since this video was made. But I would still add email as a custom text question too, and you can just set your CRM to use the email address from that question, not the email address from the pre-filled one.
It depends on how big the audience is and what detailed targeting you're using. If you create a lookalike audience of your existing clients, and target that list, you shouldn't need additional detailed targeting.

I added the email and phone and Facebook rejected my ad saying I’m asking for questions that can come from pre fill - is this something new?
Oh yikes! It might be! I haven't run into this issue yet, but it may be something Facebook is rolling out.
prefilll questions are not completly gone when i add custom question i dont want prefill questions
