Very nice work! I’ve ordered a palette because I detest folding my shapes to get right sides together. I think the flat-back stitch will work great, and I will be prepared for bigger, odder EPP shapes in future projects.
It looks so easy, so I bought some and I find it very difficult to do the flat back stitch...must be the learning curve. I will keep trying as it seems that I may be the only person having problems.
There is a learning curve, for sure! It took me several pieces to get the hang of it! Try flexing the Palette, or moving your pieces to a different area of the Palette, until it's comfortable!

Doesn’t look like it would be helpful using small pieces. For example 1/2 inch Hexies.
Yes, that size would be too small for the magnets!
