One says peeling carrots makes you lose nutrients, other says peeling carrots reduces the amount of pesticide you consume. Human diet in relation to health is extremely complicated and many people spend their whole careers studying it. The problem is that many people will study the same thing and come to different conclusions. Depending on who you ask, a staggering amount of food is either terrible for you or incredibly healthy. You can find scientists who spent decades studying the same topic and yet they disagree wholeheartedly.

That’s what I like about traditional Chinese medicine. They don’t just say eat leafy green vegetables. They explain some are better to eat in cold months, others in hotter months. If you’re angry this type of exercise is good for you and if you’re weepy another exercise. It’s variable to what’s going on in your life at that moment.
If you're concerned about pesticides you can look at the proper ratios for the baking soda vinegar fruit wash. Soak your produce in the solution for 15 to 20 minutes. Scrub and rinse thoroughly and your food is at least 95 to 98% pesticide free and now edible

Yes! TY Dr M. Like others here I just scrub or rinse if local/organic. If I peel it’s to eat in meal. My parents always had big veg garden and berry bushes so I grew up eating fresh picked. Baby carrots and string beans yum!! Every child should have this. Easy to grow veg and berries in containers and kids love helping and seeing plants grow. 🙏❤️✨

Yes without the fiber.
And the fiber is important for stopping an insulin spike. Without the fiber, you get a sugar rush which is not good for your blood sugars
