- How to make your own jerky at home in a Weber Smokey Mountain.
Once you learn to make your own jerky, you'll never buy store bought again.
Time to make the marinade, this recipe is for 2 kilograms of meat (4.4lbs)
Jerky Marinade Ingredients:,
2 cups of beef stock
2 cups of soy sauce
¼ cup of whisky
1 cup of Worcestershire sauce
1 cup of dark brown sugar
1 tablespoon of onion powder
1 tablespoon of chilli flakes
3 tablespoons of course ground black pepper
10 cloves of minced garlic
Marinade over night or up to 24 hours. Noe longer or it becomes too salty.
Hydration:
10 x beers

Just made this today in the weber kettle using the snake, fought the temps at the start to keep it at 75 but got it humming along. Turned out awesome! Another crackin Schuey recipe. Appreciate you sharing your knowledge mate. Cheers

hi hi.. Snake - was it 2 x 1 or 2 x 2 please? I'm thinking 2 x 1 so the temp doesn't get up too high. Or would it work with just the two and no top row at all? That would make sense in keeping the temp lower, no?? I am doing the jerky in the Weber kettle too :D

ya reckon the same 2 closed vents and one open a hair trick will work on my 37cm WSM

When I was a kid it was just called wooster sauce, was told by a Pom that's correct. But saying Worcestershire is so much better exercise for the mouth, almost as good as munching jerky!
Worcestershire is a pig of a word. Pairs nicely with moist though.
