BC started my K. Sabatier addiction a few years ago. They have the most underrated Western chef's knives out there.

I just picked up a Sabatier Trumpet 8-10in chef's knife with Forschner engraved on the handle.
Can you tell me anything about this knife?
Value, quality, age, type of stainless steel?
I'm at a loss to identify it beyond that.
Hi,
Forschner was an importer who most likely had their name engraved on the handle because they were the ones distributing that knife. (Same with lots of Victorinox knives) There are hundreds of brands using the name "Sabatier" so it's to narrow down. If you send us photos at info @ bernalcutlery.com we may be able to provide a bit more information. We also offer appraisal services if you prefer a full assessment.

What sort of Rockwell hardness would we be looking at here?
These knives would all be around 54-57 Rockwell
@Bernal Cutlery Sabatier are made by a few different companies, is it true the K before the name indicates the original company and which companies make the best knives?

As long as Sabatier is made in France, it's a good knife. There are Sabatier knives made in China. They are junk. Only buy Sabatier that is made in France and it's written on the blade that it's made in France. Happy cooking!
This is not true. There are lots of low quality made in France knives. K Sabatier is one of the original families and is amazing quality though.
