I made this with bacon and lots of onions and it was amazing. I fried the bacon half way and then added onions and peppers, cooked for about 10 mins in low heat then added the tomatoes and spices. Cooked some more and then added eggs. It was delicious. I know bacon is not traditional but it tasted so much better 🥂

I always separate the whites and yolks, put the whites in first so they cook through, then add the yolks and cook until they're the right level of runnyness.
This is a huge breakfast staple in my family but every single one of us usually simplify it to just mushy tomatoes with salt, pepper, and eggs we usually slightly charred tomatoes
