It's been way too long since I've had decent Chinese food, so I took matters into my own hands and decided to give it a go for myself. Turns out making authentic chinese food is not so easy in Germany! I enlisted the help of my friend Andong, from the RUclips channel 'My Name is Andong' to give me some tips.

Hi Amy, there's actually an Asian Food Market opened by Thais in Ingolstadt, where you can buy original chinese cooking wine, Soya sause (dark and light) and almost everything you Need to cook Chinese dishes. I go there quite often and buy things there. You can just goole "Asien Markt" in German. It's just near the City Hospital! Hope you enjoy it next time when you're in Ingolstadt!
yeah! I saw that online! The only problem is that its on the other side of ingolstadt (a decent hour or more walk) from where my boyfriend's appartment is. And we have no car haha

The flour situation is very difficult for me, too. And I was born and raised (and am still living) in Germany 😂 I just pick the next best “Weizenmehl” if I want basic or all-purpose-like flour. I know the numbers mean something, but I cannot remember for the life of me what the heck that was... 😅

I live in the Eastern part of Germany and I go to the asian supermarket for my stuff. Sometimes I order online. And my new find is to replace the dumplings with russian frosted Pelmeni. They taste really good. 😋

It is amazing than you made Chinese cuisine in Germany where the ingredients is hard to find in coronavirus outbreak, you did a good job, especially for making the dumpling which is a challenge even for Chinese because you need handle the flour. IIRC liaojiu is an oxidized rice wine, so the sherry you'll want as a sub is olorosso rather than fino.

we normally use 405 flour, the others are for special things and flavours. And you bought jelly sugar. Jelly sugar is for marmerlade, not for cooking. But bon appétit!

You can be sure that Maultaschen are also inspired by the "Seidenstraße" as also the Nockerl which should be based on Gnocchi.
For cooking the dumplings. There's a traditional method to know how long to cook. And that is to put on the lid. When it boils over, add a little bit of water (not too much just enough so that it stops boiling). Then put on the lid and repeat 2 more times.
I know it seems more complicated than it needs to be, but that's how you get that film-like texture on the skin while still retaining its firmness.

hi Im from China and live almost 10 years in IN, there is actually a good chinese resturant here names Yuan Wok (Yuzhongbutong in chinese), it looks like a small Imbiss but you can order orginial chinese food if you can read chinese:)

wow I have to try this. I was forced to end my exchange to sichuan university early and go back to germany because of the virus situation. I rly miss sichuan food. Good to see basic ingredients can work as well. I hope i can find sichuan peppercorn in one of the asian supermarkets

There are also chinese supermarkets in germany cities.In there you can find more traditional chinese flavour.
Out of curiosity, don't they have Asian markets like we have back in Sydney in Germany? Pretty sure you can get those condiments there.

We get all our ingredients in China Town here in Antwerp! I would think that there should be lots of Asian supermarkets in Germany too. Don't know if you're near Melbourne or Sydney but they have a great Asian district with hundreds ofd Asian restaurants and shops. Shouldn't be a problem there to get the correct ingredients.
To get a more authentic Chinese flavour you should have added Sesame oil to the minced meat, but obviously you wouldn't have been able to find it. Also the Chinese dark vinegar and cooking wine add a lot to the taste!
We always add "Loa Gan Ma" (chili) to our dipping sause when eating Xiao long Bao or Jiao Zi because that's more Kunming style where my wife originates from.
Actually, we have a lot of sesame oil... But the other indgredients are impossible to find
Please have a check on a Chinese online supermarket called 打酱油 in Germany. You can find all those sauces there
If you go to Asian supermarket, if there is any in Germany, you can find Xiao shing wine, light and dark soy sauce, oyster sauce, Ask if they have American Rose brand wheat flour, windmill brand potato flour, rice flour, glutinous rice flour, corn starch, tapioca starch , etc etc
Special on Ingolstadt railwaystation is an authentic szechuan Restaurant.
I usually take an empty glass water to replace the rolling stick. It works just fine :P
Haha sounds like a similar method and recipe we used to make for egg rolls at my parents restaurant
