Hi, I love watching videos on a custom that is so popular in my country, Argentina (and in other countries too), but the video has errors and is incomplete.
1 - Is Mate, not Maté.
2 - Only containers made from gourd or wood should be cured. If the container is made of metal, porcelain or glass, is not necessary.
3 - The mate is accompanied with sweet things like cookies, cakes, etc.. Not salty things! (with the exception of some types of bizcochitos and croissant and other things made with lard)
4 - It is very common to put additives to the mate. Sugar is used to sweeten. But also other things are used for variety of flavors such as coffee, lemon or orange peel, mint, etc.
5 - Popularly hot water is used on the infusion but there are other alternatives that are used less frequently like hot milk.
You can also use citric fruit juices or just cold water (this option is chosen during the summer mostly) and this cold version is called Tereré.
6 - The mate is mostly drink during breakfast in the morning or afternoon snack, but in reality, many people drink this infusion at any time of the day. During work, in college, in parks, etc.

In the north of Argentina (Misiones) the "mate" its sightly different, we use less ground yerba mate, the gourd (porongo) has a bigger top (allows the use of more yerba to avoid faster "wash"), it starts with a little of warm water then you use 80ºC water. A good mate is foamy and bitter.

Nice video, although I have to say I don't shake it and don't fill it to the top either, you're supposed to leave a dry part so after the taste starts to get milder (mate lavado) you can put the bombilla in the newer yerba. We take our mate very seriously in Uruguay and everyone has an opinion on the "right" way to make it. Also nice to see the Uruguayan yerba...

I'm from Argentina and here you drink mate everyday with anything that you imagine, I know a lot of people who love to drink mate and eat pizza, sandwich and other stuff (sweet or salty), for example right now I'm drinking mate and eating an apple. And in summer time we usually drink terere, made with cold water or cold fruit juice, it's very refreshing and people who never drink mate before like it better

I traveled to Cordoba, Argentina and went south to Patagonia for 11 days mainly to attend my cousin's wedding. I had my first gourd of Mate 3 hours after landing in Buenos Aires, it was strong and earthy. I didn't like it very much. But then I had another later in the day while chatting to family outside. I drank 6 or 7 mates in a about 4 hours. I was hooked. Now I drink Mate and Green tea Matcha here in the USA instead of Coffee now.

I normally add water, wait a little, so herb can absorb it, then i put the "bomba" or "bombilla", with the hole covered with my thumb (do it or the bombilla may clog, it will until you get some practice, i dont know why it happens).

Mennonites(it's a cultural/religious population), in Canada, also drink yerba mate, but they drink it from a horn instead of a gourd.
They "discovered" it when they went to South America in their attempt to settle there and work the land - but many returned to North America when they couldn't acclimate their crops to the climate and ended up bringing this beverage with them.
So you can find it in some of the larger cities with a large Mennonite population or in stores that they run.

No seamos boludos.

Need to clarify about the temperature of the water - if you are to drink it @ 150° then DON'T heat the water to boiling (212°); you can heat the water to 180° but not much above that. Boiling water makes the esophagus vulnerable to damage, which could lead to cancer.

    • @seyfersnake
      @seyfersnake 8 лет назад

Also it ruins the flavour. Under no circumstance should the water be boiling. I dont know in fahrenheit, but in celsius its between 70° to 80°.
Edit: also, its not necessary to pour a bit of cold water, some people do it, some others dont.

Great video. I must say a few things though. Mate is not written with an ortographic accent on the "e". To prepare Mate it is very important that water DOES NOT come out to a boil; instead, you want to remove the water from the heat just a minute before it'd start boiling. I know that's explained at the ending but in the beggining it says "bring a kettle to a boil" but once the water boiled, it is useless. Doesn't matter if it cools down afterwards. Love from Argentina and keep on drinking mate.

Cold water always not to 'quemar'(burn) the yerba. If you are drinking and don't want to do it anymore, just say 'Gracias' to the person passing it on, they will understand you dont want any. Salud!
