Authentic Pakistani recipe Lamb Yakhni Pilau Rice (URDU)

  • Pilau rice is cooked all over the Asian continent but especially in India and Pakistan
    You can use any meat of your choice or veg and can be eaten on its own or accompanied with some curry, raitha or salad
    Ingredients:-
    2kg lamb meat (you can use any cut I’ve used leg)
    Onions
    Tomatoes
    Garlic
    Fresh green chillies
    Oil
    2 cups of basmati rice
    Garam masala
    Cumin powder
    Coriander powder
    Salt
    Cumin seeds
    Cloves
    Peppercorn
    Coriander seeds
    Bay leaves
    Cinnamon stick
    Large black cardamom pod
    Star aniseed
    Garlic Ginger paste
    Method of preparing :-
    First let’s make the Yakni
    Pop the meat into a large saucepan
    Add 1 onion and 2 tomatoes dived
    Now add 3 green chillies sliced
    1 whole garlic bulb sliced in half
    Next add dried spices
    3 bay leaves
    1 cinnamon stick
    A tablespoon of pepper corns
    A tablespoon of coriander seeds
    A tablespoon of cumin seeds
    A teaspoon of cloves
    3 large cardamoms
    2 star aniseed
    1 teaspoon of garam masala
    1 teaspoon of cumin powder
    1 teaspoon of coriander powder
    2 teaspoons of salt
    Now add 4/5 cups of water and pop pan on flame on high heat
    Once the water has come to boil
    Turn the gas to low cover and cook for an hour until meat is tender
    Now wash and soak 3 cups of rice in water
    Ideally soak for 15 minutes before cooking the rice
    Now add 2 tablespoons of oil into a large pan and heat up
    Then add a sliced onion and caramelise until dark brown
    Add half a cup of water to take cookout out of onions
    Once the colour has come out of onions sieve the onions out so you are left with the dark brown liquid
    Now take the meat out of the stew we cooked earlier and transfer meat into the liquid we have just gotten ready
    Add 1 tablespoon of garam masala and 1 teaspoon of salt
    Now add a tablespoon of garlic ginger paste and a teaspoon of red chilli paste
    Mix together until the meat has gotten a lovely dark brown colour
    Add 3 cups of the stock left from meat and bring to boil
    Now add the soaked rice and let it simmer on high heat until water has evaporated 90 percent
    Now pop the flame on low and put the lid on cook for a further 8-12 minutes until rice is cooked
    Serve your rice with some salad and a yoghurt raitha of your choice
