...exactly the way Granny taught me in the 1950's.
I started using Einkorn, an ancient wheat, for pie crust and other pastry doughs, its much lower in gluten than regular flour so you get a flakier crust.

So im going put my shortening in the fridge from now on!! I usually keep xtra butter 🧈 in the freezer, I grate the butter like you would cheese!! Easy pease when frozen!!

Yes, vegetable shortening is pure Trans fat.

Actually, coconut oil isn't better than shortening. It's the same difference

I made a coconut oil pie crust, it was flaky, buttery and no need to chill it! Highly recommend for those who want a dairy free option.
I like to refrigerate the flour also before use.

I've been making crust forever and found that shortening made the best pie crust. I tired everything, even your recipe but nothing beat shortening. It doesn't really matter if the water is ice cold like when using butter and so imo, it's just a simpler recipe too. ☺

Good idea ice cubes in chilled water. Do you ever brush your unbaked crust with egg yolk then bake a bit before filling your pie?

However even if you make it with your feet it will be MUCH better than a store-bought, so in the end you really can't do it wrong.

I made 75 pie crustes to freeze one year with my MiL. I've had arthritis is my hands every since. I can't make a bad crusty. Don't know why, it's just the way it is.

I prefer mass, in grams.
But, knowing the right consistency, how much water to add, is the real key.
