Kind fkr hearing. While viltrumites do have superhuman hearing, the sensitivity in their ears is to help viltrumites fly.
some frequencies can eliminate a viltrumite out right with enough exposure. There was also a bio weapon in the comics that was tailor made to exterminate viltrumites.
Just do 100 push ups, 100 sit ups and 10 km of running every day for 3 years, and Omniman isn't a problem anymore.

In the comics viltrumites have a weakness which is are certain frequencies that was used by robot and made mark's ears bleed and drop to the floor.
And later on mark who travelled back through time accidentally warned the guardians of nolan's betrayal and they manageed to subdue him without anyone dying

Saitama (which full power we don't know yet) jumped from the moon to the earth at relativistic speeds, and casually deflected with just a punch an energy attack that would wipe clean the surface of the Earth. He also is orders of magnitude more powerful than a being that, also casually, sliced off a continent-sized chunk of Earth. That alone puts Saitama well beyond Nolan. And, as I said before, we still haven't seen Saitama break a sweat.

Spoilers for the comics and differences between the show and comics:
Regarding melee weapons, Nolan took out the Guardians of the Globe easily in the comics. He was just heavily underplayed in the show.
Viltrumites also can be put into a severely weakened and deadly state when you mess with their equilibrium. Best example is sending a sound that can disturb it like when Cecil does it to Mark in the comics.
Last, just hire Battle Beast like Machine Head, that behemoth managed to fight off like 6-7 Viltrumites while using one as a weapon. And fought with Thragg for days.
Except, that is a specific frequency that they wouldn’t have found if nolan didn’t state it in his book. Plus, battle beast would get clapped by nolan at that state. He got one shotted by thragg. And then got an upgrade. Pre upgrade BB wasn’t all that impressive

Spoiler: Red Rush already put him into cardiac arrest (and Cecil's mercy) singlehandedly. He also saved all three of his allies from being insta-killed before putting Omni into borrowed time.
red rush carried the guardians of the globe single handedly.
Study all his fights, focusing on times he was most seriously injured. Develop a weapon based on that data.
When the weapon is ready, frame the most powerful individual or group you can find for threatening his family(the one thing he's sorta moral on at this point). There might be a slim chance they'll take him down, if they don't, he'll be weakened and that's when you take your shot.

since i first finished the series (haven't read the comics) i've been praying for Battle Beast v Omni-Man in Season 2 .
Season 2 is too early for that big showdown
omni man has 2000 years of fighting experience, literally flew out of the solar system in an hour (3x the speed of light). The only way you are beating omni man is being a stronger Viltrumite or being one of those battle beast species

Being someone who has been reading the invincible comics since before Kirkman even started the Walking Dead, it's wild to me seeing videos like this. I'm glad invincible is mainstream now, but I feel like it should have been a while ago.
Teaming up with the Flaxans might be a solution in this case.
If they were able to negate the temporal differential between dimensions to stop their accelerated aging in our dimension, then meybe they could reverse said effect in order to build an aging device.
