I love the fact that all Mario Karts have the Super Mario Kart intro incorporated into their music. It feels like a way of saying that despite everything they don't forget their origins.
Even Super Circuit. Though it's not in either of the title themes, it is the race theme when playing multiplayer with one system via multi-boot.
I fail to find it in DD!! though

The MK wii intro is objectively the best one. It has a kickass music track, more dynamic gameplay clips and cgi animation made just for it, while the others has just the main theme and showcase random clips

Because Mario Kart Wii took them as Retro Tracks.
That’s a thing since Mario Kart DS where tracks from previous Mario Kart games are back as Retro Tracks with updated looks/graphics and/or slight changes in the tracks layout with additional features and things like that.
