    So sorry you are sick. My utmost respect for your commitment! I also just dehydrated cherry tomatoes. I sprinkle salt flakes on top because I love salty snacks 😂 I dehydrated mine for 24 hours.

    I too use that food mill. I think it works great. So excited to see this video. I have 1/2 case of plum tomatoes that I want to can today and marinara is what I plan to do.

    Thank you! I canned some green beans the other day, but there's so many videos that leave out steps. It's been a long time since I've canned, but I got my jars hot, my water boiling, plus the water in the canner hot, with my lids and rings pretty warm. I was always taught, hot liquid going in, you need hot jars, and hot water in the canner. Some of the utubers leave out that step about having hot jars, or don't say anything about it. They just put hot liquid in the jars. So, for a beginner, or someone who hasn't canned in a long time, it can be confusing. Good tutorial for someone your age.

    So glad I found your channel. Quick question…. Do you not cover your jars with water to water bath them? It seemed the water was an inch or so from the top of the jars. I have seen one other person claim they don’t cover completely with water and I’m curious of your thoughts on this.

    Great video, thanks. This recipe is similar to my goto recipe except I add a cinnamon stick to the brine and equal amounts of cubed pineapple as the beats. I'll thicken the brine with cornstarch if I serve it warm as a side dish.

    Now that was quick thinking and so clever re: the food mill! Hate it broke, though! I need to look into getting one of those because I love blackberries but they have soooo many seeds. Well done on getting this challenge started with a bang! :) Looked into some reviews of the strainer attachment and it seems there were other people who had issues with using blackberries through it. That's so sad!

    Im not a huge beet fan, but my mom makes this recipe and i really enjoy it! 2 small apples, finely chopped 1 beet, finely chopped 3 carrots, finely chopped Juice of 1 lime 2 TBSP of honey 1 TBSP olive oil Mix well and enjoy! She has also added fresh blueberries or fresh cilantro its a fairly flexable recipe.

    Hello, that was so informative! I didn't know you could freeze pesto. Now i know what to do with some of my basil. Fantastic! The beets however, are not a favourite of my families so won't be doing those. I do, however, sometimes buy beets and roast them just for myself or buy pickled beets.     I use my juicer for tomatoes on my berries. I don't have the attachment for my kitchen aid. It works great--and my ladies in the coop love those scraps. Love watching your girls help--I miss those days. Enjoy every minute of it, it goes by quickly.

    Feel better soon! I love putting pickled beets, brine and all, with hard boiled eggs. It turns the eggs pink, and only gives them a slight pickled flavor. I know there's recipes for making a chocolate cake with shredded beets, which adds moisture and sweetness to the cake. Google a recipe that looks best to you, try it out, and if your family enjoys it, freeze shredded, uncooked beets, in the amount needed for a cake. Add some extra for the frosting, to add sweetness and a natural pink color. You could also dehydrate beet slices, then grind into a powder, for a natural food coloring of pink to red, depending on the amount used.
