I use baking powder aluminum free no nasty after bitter taste
The secret is about a tbsp of cornstarch to every 10 pieces of chicken. The chicken should be coated but not like flour.
I did this in the deep fryer and it was delicious and gluten free🥰

I get the slippery feel when I order beef and broccoli takeout.
Maybe use less cornstarch. Start out with 1/4 - 1/3 cup of cornstarch. In a bowl add the spices, cornstarch and wings. Massage mixture onto wings evenly, then cook in oven. FYI...if wings are completely white in color after adding the mixture, then you added too much cornstarch.
I've always used baking powder & salt. After I sprinkle the BP & salt on both sides I let that sit for 24 hrs, then a few hours before baking, I place them on a cookie sheet. *Line the cooking sheet with foil, (be sure to cover sides & handles), place rack on it then spray PAM generously. I place the loaded cookie sheet, uncovered back in the refrigerator until it's time to bake. Then @450 for 30, flip & 30 then broiler for 5 or until they're the color you prefer. Allow meat to rest 15 minutes. Crack fresh pepper over them & then serve!!
I tried this but instead i decided to fry them in some oil, they came out really crispy and i kinda feel that smooth texture you were talking about.i dont have exact measurements i just coated the chicken in starch until i couldn’t see any meat and fried it till it was golden brown

I stopped frying wings in oil when I turned 40. I found this recipe, and have used it every since. I wish I had known about it sooner!!! A lot of the recipes I've used this for say to use "aluminum free" backing powder. Not sure why, but I use the regular stuff and they turn out perfect.
My wings came out salty, I bought the baking powder from amazon called "365 baking powder" aluminum free, wonder if that happens to every baking powder when you over use it
I’m not sure. Mine didn’t have a salty taste. Possibly using less baking powder in that case.
@Royal Fusion.....ALWAYS taste a seasoning, especially one you're not familiar with.....before you add it! Baking powder does have a "taste"....but it's NOT salty. What most likely happened.....You used a Baking Powder "mix"....That already had Salt added to it....check the ingredients list for hidden salt..... THEN you added (more) Salt.....in your regular seasoning process.....Making the end product...Salty!

I tried the baking powder oven baked method twice and it just gives you an after-taste after eating few wings. I'm confused. I will try a mix coating of 50-50 baking powder and corn starch in the coming few days. I hope it leads me to the what I'm seeking!!
I’ve tried it a few times now and I find the best way is to make sure your wings are dry. Then give them a light coating of baking powder about 2-3 tbs for 2kg wings and toss. Then put them on the trays with wire racks in the fridge for 1-2 hours or overnight. This lets the baking powder soak up the moisture on the surface. Then cook in a really hot oven until they reach your desired level of crispiness.
How did the 50/50 mix turn out?
Use aluminum free BP.
You have to use the ALUMINUM FREE BAKING POWDER❗️❗️❗️
You can also use the broil method to get them really crispy too 👍🏾

I swear by using baking powder to bake me wing. Much healthier than frying! BUT let me give you a few small tips to make them even better... •DEFINITELY USE RACK• 1. Dry the wings with paper towel(s) before coating with baking powder 2. Oven at 450° for 30 minutes 3. Flip wings after the 30 minutes 4. After flipped, put back in for anither 15 -20 minutes (depending on the size of the wings) Following these steps will make them even more crispy!

Mine turned out super powdery lmfao I cant make wings for the life of me.
Maybe try resting them once they’re coated on the racks in the fridge. I do that sometimes ahead of time when I’m hosting lots of people. (In the before times lol) It gives the baking powder time to absorb moisture.

Baking POWDER or baking SODA? So many RUclips "chefs" use the two interchangeably.
Baking powder, not baking soda. I do not use them interchangeably haha.
Kenji Lopez Alt explains it pretty well. Baking Power CONTAINS baking soda in a small quantity. However, the too much baking soda makes the chicken wing taste metallic, so Kenji. So use baking powder.
I have seen videos on oven fried potatoes using baking soda.
In croatia most mothers and grandmothers usually go: 1.flour , 2.eggs mix , 3.flour and one more time in egg and then put in a pan full of oil lol or before oil one dunk in to the bread crumbs so you end up with a bit thicker coating .... but that is only what i know we do it here like that lol :-)
