    I'm from Morocco, and this is a specialty from the northern region of the country. It's called 'Kaliente' a Spanish word that means 'hot.' The dish is primarily made from chickpea flour, eggs, oil, and water. It's not Algerian, it's not hummus, and it's definitely not a Levantine dish. The Moors (mainly from North Africa) ruled Spain for nearly 800 years during Al-Andalus, leaving a profound impact on Spanish architecture, language, and cuisine. Later, during the Reconquista, many Andalusians migrated to Morocco, bringing their culinary traditions with them. Similarly, northern Morocco came under Spanish influence during the colonial era, especially cities like Tetouan and Tangier, which absorbed Spanish flavors into their food culture.

Moroccan food is regularly associated with fine dining experiences, while Levantine food is celebrated for its simplicity and accessibility. 😉
