Foraging Honey Locust Beans to Make Falafel (Part 3): From Fabaceae to Falafel
🥙 Honey Locust Falafel Recipe
Foraged falafel made with honey locust beans instead of chickpeas!
Ingredients:
• 2 cups boiled honey locust beans (after soaking & cooking)
• ½ of a medium onion
• ½ bunch fresh parsley
• 1 Tbsp cumin
• 1 ½ tsp coriander
• 2 tsp salt
• ¾ tsp black pepper
• 1 ½ Tbsp minced garlic
• 1 tsp baking soda
• Canola Oil for frying

Cool, creamy, and perfect for dipping these wild falafel!
Ingredients:
• 1 cucumber (grated and squeezed dry)
• 16 oz plain Greek yogurt
• ½ oz fresh mint (about 3 tsp, chopped)
• ½ oz fresh dill (about 3 tsp, chopped)
• 3 Tbsp olive oil
• ½ Tbsp lemon juice
• ½ Tbsp minced garlic
• ¾ tsp salt

It would be good if you could inform people of what makes Sumac edible or not, whether they're only familiar with the poisonous varieties, or might attempt to find edible varieties and aren't sure where to look.
That’s a great thought! I’ll definitely consider it. My current style leans more toward showing rather than telling, since there are already plenty of ‘how to identify’ foraging videos out there. I like letting the process speak for itself!
