    I'm onboard with zero carrots and red meat fish. Salmon deserved to be a centerpiece on it's own (why I don't think the same about scallops and oysters, I admit I do not know). NOT onboard with celery - that belongs beside the carrots outside of the chowder. Sadness is that smoked haddock is not available here. No Finnan Haddy; no Cullen Skink. Yes, I am sad. Any ideas on how to fake smoked haddie with another white fleshed fish and smoke extract in milk marinade?

    We’re in Charleston, SC. I’m wondering if I’ll be able to find the smoked haddock, etc. We’ll see. Definitely trying this. A little expensive to make, but totally worth it!

    Hi, such a cool tip to use the oyster oil to cook with. I will keep that in mind for future use. I have been known to use canned anchovy oil in my cooking though.

    You can pretty much use whatever you want. If it is not to creamy and not to watery, it will be fine. And don't over cook your fish.

    My favorite thing for chowder is to add a little bit of sherry wine to it. Usually you have to use a thickener if you do, so I like to add in some light roux (butter and flour). It just adds a whole new layer to it.

    I LOVE lemon zest.. all citrus zest! A couple of years ago, I made an orange chai bread, and it was delicious! Sorry, I’m digressing 🙄 .. I am in Ottawa, and this morning it is very dull and gray out. A chowder is exactly what’s on the menu. Thank you for sharing! 🐳😬👍

    So, here in this NS home, seafood chowder includes, Potatoes, Carrots, Celery, White Onion, Chicken soup base, Coffee cream, Blend, Bacon, Scallops, Haddock, Lobster, Baby Shrimp, Clams, Salmon.. butter & garlic butter! Making one today, Christmas in July! ❤

    Hello from Maine USA. Thanks for the video. My own version for this time of year, is a seafood corn chowder, using all the usual suspects for ingredients along with fresh corn cut off the cob. It is a hit around here. I use lobster stock from shells and bodies I save in the freezer from lobster boils, plus I make some mussel broth to add to it all. For the milk I use organic coconut cream ps I have been to Nova Scotia a couple of times. Love it there. Way back in 69 my family stayed at Parker's Cove, and my girlfriend and I visited there so I could see it once again in 2017 (or 2018 Can't quite remember now in my old age).

    I watch a lot of cooking videos so I am a pretty good judge of a good one versus a bad one and yours is awesome. I rarely use that word but you deserve it. You should be on television. I have subscribe to your channel. It may help a bit because I love rhubarb And just made her rhubarb and strawberry pie yesterday. It took a long time to make a pie that is not mushy or slushy. I have done the custard like you and it may be my favorite. Lots of luck to you and thank you so much please keep doing what you’re doing.     I really hate a super thick chowder, I'm more of a fan of this which is a creamy - yet lighter affair. I followed along with your video loosely and came out with a great dish. I think the use of the starchy potato water is a great play instead of a thickener. Marking that down for future use!

    A shorted version of this recipe would be appreciated - too much yapping and ESPECIALLY the constant “what Doug” - very irritating! And the shaking of the head and rolling of the eyes at the end - not very professional, chef!
