What’s the cook time?
Great question and it’s going to vary with 1/4” slices I find about 8hrs is a general rule of thumb but they may take 12hrs depending on weather and smoker!!! I always rotate the racks every few hours for an even cook!!! Don’t want anything to dry out faster!!! Thanks for watching!!!

2% salt is too heavy for me. I'm not a big salt eater. .4% sage is perfect. I love sage. That's the beauty of using these percentages, you can dial it up or dial it down.
Absolutely!!! 2% is the best protein extraction and bind I’ve come up with without a salty flavor!!! If you drop below 1.5 the sausage bind is to crumbly!!! Let me know what you come up with!!! I appreciate you!!!
Hey mate good on ya for doing this recipe. In Australia, we call these crumbed lamb cutlets and they are a staple in most pubs. The only difference is that we take a meat tenderizer and bash the crap out of those fat lil bastaards before we crumb them. Therefore being thinner they will cook well in the frying pan.

I want one of those so bad... We have a grocery store once a year they sell a whole bunch of bulk meat we got like 50 lb of bacon for 35 bucks... In like 50 lb of chicken breast for 70.

Looks like a great recipe. I'll give it a try the next time I make breakfast sausage. I'm fortunate to live near a winn Dixie that occasionally has pork butt on sale for 99 cents a lb. Homemade sausages are better than anything you can buy in a supermarket.

We just made our 3rd batch of breakfast sausage this past weekend. Not having any family or friends' input, we basically went to Cabela's bought the .75 HP Commercial model. We actually intended to get an even weaker model but you know now it goes, standing there, considering if you want to have to move up to a better motor in a year or two, and not even being certain you will want to be your own sausage maker. Watching your first grind speedily going through those fine holes, and hearing no strain in the motor, I have to say there is no comparison to the Cabela's 3/4 HP. Your machine did it with ease. Ours goes much more slowly, with a much larger grind, then we put the meat through a second time with a smaller holed plate. Your machine, very impressive! I am happy we ended up with what we have, rather than the weaker "home" model, but here I can say to those who might be considering purchasing a meat grinder, do not skimp on the power. Our 3/4 HP is great, and believe me, we are grateful for it, but if you can do it, go with even more power if you are serious about grinding meat.

Ive never heard of milk powder being used as a binder, I imagine it must work pretty well to be in a recipe that clearly had a lot of time and effort behind it. How well does the final product hold its shape? I might consider trying milk powder to avoid the gumminess breadcrumbs can end up giving to things. Is this the only time youd suggest it as a binder?
It is my primary binder!!! The bind is always consistent, tight and moist!!! I would recommend non-fat dry milk powder as a binder in all of your cased sausages!!! Thanks for watching!!!
