@ around 7:45, yes, those are considered as normal generation. They've made the Y level even go negative now. and there are like aquifers in giant cave systems sometimes.

if you want your character facing the direction you are looking at try going to mods and search Leawind's Third Person and change the config. its simple to be honest, click on always facing forward

this may be your first modded minecraft so im not going to fault you for it, but to see uses for an item, hover over an item and press U for uses, and R for recipe, and the reason your axe doent work as a weapon is cause epic fight makes tools useless as weapons until you turn on combat mode, i dont know how its set up in the pack but it seems it either activates on third person or it makes you go into third person.

right click on the dragon corpse with an empty hand to collect the bones which can be used for tools Ps: if the dragon corpse has a body you can collect the blood from it to upgrade weapons from the bones

finally someone started uploading vids on this modpack. idk why your epic fight mod doesnt work on mobs, maybe its intended or a bug but i'd try to disable fresh animations resourcepack. and love your voice.
