Mary Berry does a great lemon rulade and her lemon curd is thicker , she keeps stirring the yolks over the water until it can coat the back of the spoon . Yours were a too runny , I think if you'd kept it over the water stirring constantly You may have been OK 👍 but it's a practice thing isn't it ,

Hey, So this should work fine, it just may make the cake a little more delicate. You would also have to watch out for the temperature that you store the cake at x

Thank you! That should work fine! Just make sure it’s whipped enough to hold the cake on top - sounds delicious!
Could you please share your Italian butter cream? Is the chocolate version of this cake goes with cream cheese icing?
It’s on my list of videos to do soon- definitely! I think this cake works really well with all different types of icing - I’ve only personally tried it with American buttercream and Italian butter cream but I’m sure it would be delicious!
Hi can I use cocoa powder for this same recipe to make it Chocolate sponge cake?
Definitely! I would substitute around 50g of flour for cocoa powder.

Once cake is cut it usually dries out if it isn't covered with icing, how do keep the exposed sides from drying out?
Once I cut the sponge cake I kept it wrapped in cling film for 24 hours so I could assemble it the day it was being served. Once I’d assembled and served the cake, and most of it was eaten - I then cut the remaining cake into slices and wrapped them individually in cling film. The cake still tasted fresh for almost a week! Hope this helps ❤️
