    I hope you're all doing well! Today I have my first bake from this year’s festive bakes! I’m so excited to share some of my go-to Christmas recipes and some new ones that I have picked up for this year!
    This week’s bake is a mixed berry pie, with lime zest, and decorated with stars. This was so easy to make, and you can freeze it for up to one month once it is cooked - so perfect if there isn’t many of you to eat it!     Mixed Berry Pie Recipe
    1. Sieve 180g plain flour and 2tbsp icing sugar into a large bowl.
    2. Add 125g unsalted, chilled, cubed, butter to the dry ingredients and crumble together with your fingers.
    3. Once the mixture resembles breadcrumbs, add 1 egg yolk and 1tbsp chilled water. Mix together using a knife until the mixture comes together to form a dough. Add more water if needed.
    4. Place the dough onto a lightly floured surface and knead gently until smooth. Wrap in cling film and place into the fridge for 30 minutes - until firm enough to roll out.
    5. Add 200g frozen berries and 250g of quarter strawberries to a large bowl. Add half to a pan and heat on a medium heat.
    6. Add 55g caster sugar and 2tbsp cornflour to the pan. Zest a lime and add to the pan. Stir to combine and leave on the heat to thicken, stirring regularly for around 5 minutes.
    7. Stir in the remaining berries and strawberries and set aside.
    8. Preheat the oven to 200°C/180°C Fan/Gas 5. Lightly grease a 3cm deep, 20cm, loose-based pie tin.
    9. When the dough is cool, remove from the fridge and place between two sheets of baking paper. Roll until 4mm thick. Line the tin with pastry, push into corners and trim the edges with a knife. Cover and place in the fridge to cool for 30 minutes.
    10. Place tin on a baking tray and line the dough with baking paper and fill with pie weights or cooked rice. Bake for 12 minutes. Remove the paper and weights and bake for a further 10 minutes, until golden.
    11. Roll the excess pastry between two sheets of baking paper and cut into shapes or strips - do whatever you’d like here!
    12. Once the pie is cool, fill with berry mixture and top with pastry. Brush one egg over the edges of the pie and the pastry. Sprinkle sugar on top and baking for 25 minutes - until golden.
    13. Cool for 1 hour.
    14. Enjoy!
