fried chicken is it's own food group. I used a metal skewer to move the chicken peices rather than fingers, using fingers can lead to thin spots in the batter coating, if you require a heavy hand the hold the chicken. Alsoi use the dreaded, MSG in the brine and batter mix, no cayenne pepper as it is mostly heat and little flavour i use a mild blend of mexican chill, brings medium heat but importanly to me flavours.
