How to fillet a fish for Sushi - Japanese technique | “Sebiraki”

Today, I'm introducing the technique, we call "Sebiraki" in Japan!!
"Sebiraki" refers to filleting from the back.
This is a technique of filleting used when Yubiki!!
The key to doing "Sebiraki" well is understanding the bone structure and being able to cut through the belly bones.
In Japan, there are many different techniques for filleting fish, and I plan to introduce more of them in the future.

Another great video! Thank you so much! I would also love to learn more about slicing technics. At home, I always struggle when slicing (for example) a seabream saku into sashimi or sushi/nigiri pieces. It’s difficult for me to understand the right way to slice belly and back loin to sashimi or sushi. It would be great to have a video detailing the slicing process for all parts and both sides of the fish 🙏🏽 Or else of you have any links with explanation, sharing would be very much appreciated!

Do you freeze the salmon before salting? Would not freezing be ok from a food safety standpoint?
Thank you for your comment!!:)) The salmon sold in Japanese supermarkets is usually already frozen and then thawed, so I don’t freeze it myself. However, from a food safety standpoint, I think it's safer to freeze it first and then thaw before using.

What I have found is that you could start it at a high heat until a boil. Afterwards turn the heat down and steam it until the water is gone. Then finally let the residual heat finish the cooking.

@@Sushi_Masa_Home_JP ah I have found that when there is no more water bubbling on top. That means you can steam it. There are times when I was careless and had burnt the bottom a bit. 😅
When water evaporates and the rice is properly steamed, it can be cooked to perfection. However, cooking rice in a pot can be tricky because it's hard to control the heat. If you keep the heat too high after the water has evaporated, the rice can burn. On the other hand, if you reduce the heat too early, before all the water has evaporated, the rice can end up soggy. It's a delicate balance, which makes cooking rice in a pot quite challenging😅

Ca i replace dashi for any other broth, for example chicken, or any other fish. And what if i put some fried ingredients?
Thank you for your comment!! I think using chicken broth to make Chawanmushi is a creative idea, but it leans more towards Chinese-style cuisine. For a more traditional Japanese touch, I recommend using dashi made from kelp, bonito flakes , or other types of seafood. As for adding fried ingredients to Chawanmushi, I haven't seen that done in Japan. Personally, I love putting shiitake mushrooms, shrimp, and cheese!!
Can I make a dashi powder type stock from fresh seaweed and fish sauce somehow? Hard for me to find real dashi or bonito flakes?
Sorry, I've never made dashi powder from scratch, so I'm not sure about the recipe😢 However, I recommend using "Hondashi", which is a very popular seasoning in Japan. You can find it on Amazon, so feel free to check it out here!! a.co/d/9AcWjom
My family in Nova Scotia Canada has freshwater eel in a river on their property I wanna catch them and cook fresh unagi myself next time I'm out there. Unagi is one of my favourite types of sushi but the quality can vary depending on where you get it frozen is not as good as fresh and it's very hard to get fresh unagi in North America not alot of people eat it

No, I don't have any plans to open my own restaurant right now. Right now, my focus is more on sharing the knowledge about sushi and the Japanese culture around it with people from other countries!! Plus, I just really love sushi!!XD

This is why I add salmon to rice, after the boil and before the steaming. A splash of soy and worcestershire sauces go in, and sometimes a tablespoon of sake, rice gets a stir, and salmon goes on top before the lid for steaming. 20 minutes later, enjoy.

I ordered dashi past week today my order cancelled by the seller. Can i alternate dashi with mushroom seasoning? I thought that will be closer in taste compare to the chicken/anchovies stock (cube).
Thank you for your comment!! Sorry for the late reply, Since dashi originally comes from fish, using mushroom seasoning might result in a slightly different taste. That being said, I can't say for sure since I'm not familiar with the taste of mushroom seasoning. However, as you mentioned, I also think mushroom seasoning would be closer to the flavor of dashi than chicken seasoning!!
