According to Ippodo's website, Horai and Sayaka are the same matcha, but they are labeled differently depending on the package size. "Horai," named by the head of the Omotesenke school of tea ceremony, is identical to "Sayaka," named by the head of the Urasenke school, with the only distinction being the packaging size.

Omg perfect! I was looking for a video like this tysm. I just bought the ippodo sayaka recently after watching ur vids and I love it. I was wondering how’s the durability of the bamboo whisk you linked? I bought a set from amazon (teanagoo) with my matcha and after 3 uses both the whisk and chashaku started splintering. (I made sure to be gentle and soak my whisk in hot water for a while before use and dry it on a whisk holder). So I just wanna make sure im getting a decent one, tysm

I want to try Ippodo macha and have noticed that some of their prices in Amazon are higher than the prices on their website. Personally, I’d rather give the smaller company ALL of the money instead of having a percentage taken from Amazon. I also use these beaker shaped measuring cups with v-shaped spouts and handles (from Amazon) so I don’t have to weigh anything when making my matcha. 100 ML of hot water and 250 ML of heated almond milk. I can’t agree with you more about using a temperature controlled kettle. I use mine to heat the water to 175F.

By the time you got to Kinrin there was half an inch of melted ice water on top of it. Highly suggest a re-do on this review - prepare it both ways - just usucha maybe 70mL of hot (not boiling) water, and then the way shown in this video. And compare the flavor differences in the two preps.

i keep my stuff in the fridge with oxygen and moisture absorbers and have been getting better results that keeping the can outside of the fridge.

I just get into matcha recently and i still do not really sure how to tell the notes from one brand and the others like "nutty, lemony, oceanic smells" lol But i guess i just haven't explore that matcha brands yet, so it's hard to tell the diffence. It's a fun video to watch but i think it would be better for you to add the ice right before you drink it bcs the latter matcha you drink, it will be watered down with the melted ice

What is a similar matcha to ippodo sakaya?

Sorate and Kusui is my go to as well. I live and work in NYC and I need be careful if I go to the teahouse cause I gravitate towards the premium stuff. Ippodo is also my fave, I cannot wait until they reopen their cafe here. Love your videos ❤
