First time making this Recipe for 10 Litres: 18 Elderflower Heads Zest and juice of 8 lemons 1.8kg sugar yeast O.G. 1.066 I misspoke in the video saying 15. It should work out around 8% To carbonate 15g of sugar per litre stored at 20° I'll bottle in beer bottles with crown caps. Other options are fizzy drinks bottles, or wine bottles with corks and cages.

    Just started some new ferments of baby carrots and jalapeno peppers. My 1st 1/2 gallon Mason jar had 1.75 pounds of baby carrots with six large jalapenos (plus thyme, head of garlic and 2t peppercorns). They were good, but not enough spice. I just made two 1/2 gallon Mason jars plus a 24 ounce jar using 18 jalapenos and 2.25 pounds of baby carrots. My fingers are on fire from deseeding those 18 peppers. This batch should come out nicer. They will not be super hot, but will be more closely balanced. I hope you can give a try on some similar fermentations.

      Ooh that sounds great is that a form of Kimchi? The only ferment I've done is sauerkraut and sourdough. Love them both but I've had no luck getting a starter to work since moving to Scotland, ambient temps are too cold!

    I've been experimenting with my apple cider w/pineapple using Hornindal Kveik yeast. I have been trying to brighten it up using citric acid. I am currently up to 5.5g of citric acid in a pilsner glass. It might need a touch more acid, but this is an experimental 1st cider for me.

      I tried making apple cider vinegar and apple wine last year and both were a total fail. Wine never again. I'd like to try cider but from what I've read people seem to recommend two or three varieties of apples ands we just have one.

    There is another variable in this decision about having your own mill: I compete, so I need consistency. My mill has a label called 'Pilot' but I think it was made by Miller (I can't find a name of the company without effort).

    The next time you brew the Pineapple Pale Ale, use BRU1 hops. Also, do not add them as a boil/bitterness addition, use them as whirlpool additions for 30 minutes. Cool the wort down below 160 degrees F. See how that works for you.

      Aye I've seen a lot of people use Starsan for cleaning and such, it's bloody expensive over here though. Ah jealous over the moonshine! It's illegal over here to use a still to make alcohol without a license.

      @@cluckifikno One ounce of StarSan makes 5 gallons. I mix up a 2.5 gallon keg and keep it available. I transfer it to a chemical safe spray bottle and use it for lots of stuff. Moonshine is illegal almost everywhere - but only when you get caught.

      @@mutantryeff That is really good to know! No where near as expensive as I thought and I love that it's no rinse, that will definitely go on my wish list. Haha yeah good point, I've been tempted in the past to both buy and make a still but never pulled the trigger. Not much of a spirit drinker anymore although I would love to have a crack at spiced rum!

      @@cluckifikno Having StarSan in a spray bottle is amazing. I can spray my hands, spray a fly buzzing around, quickly sanitize a bowl or whatever. Spray and let it sit for 30 seconds.

    Today I moved my 4+ gallons of apple w/pineapple cider to a secondary 5 gallon keg. I stabilized, carbonated, and chilled it down to 42F. My initial tasting is that I'm not sure the Hornindal Kveik yeast was a good choice. I was also somewhat baffled as to why I could only get to a gravity of 1.013 after 32 days of fermentation. The flavor seemed a bit harsh and I feel that is from the yeast. I'm hoping it will mellow out with some aging. I'm debating on whether to back sweeten or not, as 1.013 was probably what I wanted to minimally back sweeten too.

      That's a shame, it's hard to predict how something will turn out. We can only experiment and hope for the best. I went to bottle my elderflower wine today so tested the gravity and it was 1.042 after a month. The yeast had done a bit then given up, not had that happen before. When I back sweeten I just keep adding sugar until I like it lol. It will definitely mellow out given time. I've got a sixty shilling ale in a pressure barrel that's a year old and I've only just started drinking it. Until now it had a horrible chocolate flavour that's finally disappeared. I've made a dry Irish stout a few times, the first couple of batches took six months to age until it was spot on. Ingredients for the last batch came from somewhere else and the dark roast was far too imposing. A year later it mellowed right out!

      @@cluckifikno Wow. 1.042 is not good. I'm just going to let my cider w/ pineapple age out some to see if it mellows. I'm in no hurry to drink it. I often find myself dumping kegs of this or that, as part of the learning curve.

    What type of yeast did you use? what brand? Is it brewer's yeast in an 11 gram sachet?

      Hi mate, I've made this with whatever yeast I've had on hand. So Youngs brewers yeast that comes in a tub, a home-brew shop off brand yeast, Gervin Ale Yeast GV12, and Safale US 05. I've also made this with yeast harvested from the slurry after bottling a beer. I've not noticed a difference between them. I'd say the ginger overpowers any influence the yeast would have. The cheaper yeast is usually about a teaspoon per UK gallon. The ale yeasts are about 11g per 22.5L batch.

    This is by far the most followable video I've seen on ginger beer - thank you! Could I ask something, if you have a moment? At the end, you say, 'into the fridge they go'. Do they have to be kept in the fridge? I'm new to this and I'd hoped that carbonating with a controlled amount of sugar at the end would mean that you could leave the bottles for a few weeks without needing to refrigerate.

      Thanks so much very kind of you to say! No need to refrigerate whatsoever. I only put them in the fridge when I want some cold ones on hand. I’ve kept beer for over a year at room temp (it is an unheated room for the most part). The only important thing is to avoid direct sunlight 👍

    Does that barley end up becoming beer or ???. The last time I was involved with combining barley, I was 12 and was nearly run over by a full grain wagon.

    It has been so hot for a couple weeks (110F to 123F) that nothing is setting bloom. No tomato, no pole beans, etc. What is doing super good is watermelon, hot peppers (except pubescens varieties), and eggplants. Starting tomorrow, we will be back to days under 100F for at least 10 days. Also, 123F is confirmed not to melt belly fat.

      Oh my days, I wouldn’t think anything would do well in that heat! 68F is now my limit, hotter than that and I’m good for nothing. Haha 😂 59F is no good for loosing fat either, I keep eating to stay warm lol

      Yes I've always been paranoid about introducing oxygen but someone pointed out early on it's not a bad thing as the yeast needs it. I figured as fermentation had barely started I'd risk it!

      @@cluckifikno Yeast needs the oxygen only early on in the fermentation cycle; don't introduce oxygen past the first 4 days. You were transferring to secondary.

      I should mention it was about 10°C for the first six days so very little fermentation had taken place hence me thinking I could get away with it. Once in the demijohns I brought them into a warmer room to get it going!

    My apple cider w/ pineapple using Hornindal Kviek has been fermenting in a 5 gallon keg since the 21st of June. I started it hot at ~95F and then pushed the fermentation down to 64F/65F. Fermentation is slowing but still going. Will be stabilizing and back sweetening with 2 containers of frozen apple juice and 1 of pineapple. The aroma in the kegerator smelled of really fresh pineapple from the CO2 coming out of the 13psi pressure relief valve.

    Love seeing the green and flowers. Our 100F to 110F+ temps keep everything brown unless watered daily.

      We’ve not seen the grass here very turn brown, we have quite a lot of rain even in summer and the highest temperatures here in summer are usually around 20 Celsius (about 68F) This year it has been a very cold summer so far and everything we are growing is way behind compared to last year.

    I recently had a glut of elderflowers, mostly white but also red/pink. I made a lot of elderflower syrup with the white flowers and today used it start 2 gallons of champagne. I also made red/pink elderflower and rhubarb syrup. it's lovely but I'm going to resist using it for champagne. I was using a gingerbeer recipe that said I had to make a bug first then a wort. It's more complicated than this recipe, so I'm going to change plan and follow this one instead. As the ginger skin has a natural yeast on it, is it best to remove it? Just a note on peeling, Ive always used a teaspoon and found it to be the easiest method.

      Ooh lovely! I've made syrup from the berries that was delicious and a cordial from the flower also beautiful. Just started a batch of Elderflower champagne yesterday. I've seen the bug method but I think it requires organic ginger for the yeast and I can't get that here. Yes this is definitely simple if not a bit tedious lol. Ah you're so right, last batch I peeled with a spoon and it was so much easier and quicker. Some people say leave the skin on some say off. I think the skin would make the flavour stronger but I wouldn't worry about the natural yeast. I made a mango beer and wild yeast started going wild and it just added to the flavour. It's a bit akin to sourdough.

    The birds chirping sound like they are in the house here. I use two Yamaha MSR100 monitors for speakers. Beautiful panorama. I started an apple cider w/pineapple using Hornindal Kveik yesterday. First time to use Kveik and it went nuts - should have used a blow-off tube but live and learn. No idea how the Kveik will impact the flavor of a cider.

      Awesome set up you have there! The speakers built into my Mac are pretty impressive for what they are but I sure do miss my floor speakers for when I want to crank up Led Zep. Ooh that sounds like a winning combo pineapple and Kviek. I made 5 gal of cider vinegar 2 years ago and still have a demijohn left. Mind you I just used some left over mother so it never really got strong enough. Think I'll make a new batch this year but add some proper yeast.

      We really enjoyed joining the villagers for the D-Day commemoration, we felt it was very important to pay our respects to all the brave people involved in the Normandy landings ❤️

    It’s all so pretty there. Glad to see your handsome face! I’ve been watching on Instagram someone who is an actual hedgerow layer in England! He restores and weaves the most amazing things using the willow and vegetation there. Lovely video!
