Welcome to The Taste Buddies...a fun, interactive foodie group created by Lakis, Alex and Diana to share our joy and passion for food with our "Buddies"! Lakis (Chef and Chief Taste Buddy #1) was born and brought up in a taverna and, together with his life-long partner Diana (behind the camera & in charge of washing-up!) and our son Alex (Chief Taste Buddy #2) found ourselves locked down in Jamaica in March 2020..... stranded for 3 and 1/2 months in paradise with nothing to do! What started as a bit of a lark to keep in touch with friends and family has grown into a great group of Taste Buddies who have become a family of their own! Join us for informal kitchen fun, great recipes from all over the world, tips and ideas.
BAKALAOS (Salt Cod) with ROASTED RED PEPPERS & CHERRY TOMATOES
Don't fret Taste Buddies if you can't get (or don't like!) salt-cod...this recipe works equally as well with fresh cod fillets too! A super-simple recipe that is full of robust flavours and is just as pleasing on the eye as it is on the palate...and, because it's all in one pan...easy on the washing-up too! This dish is extremely nutritious, and the only accompaniment needed (in our opinion!), is some lovely crusty village bread to mop up all those heavenly juices (oh...and a glass of a nice white wine!). Leave out the bread and you've got yourselves a gluten-free winner of a dinner. Either way...enjoy!

You didn't save/usa any of the pasta water...?
Well spotted! Reason being, this is quite an oily sauce by nature so sticks very well to the pasta without the need of the pasta water...but if you prefer to use it anyway, there's absolutely no reason why not! My family never added paprika to pastisada but I'll give it a try!
The paprikas (the hot one and the sweet one) were always in the Spetseriko we used to buy from "Τσαρουγκαν" (in the middle of Corfu Town) Also, my family (we are from Garitsa) always cooked with them, so it's all I know! Which part of Kerkyra are your family from?Brilliant that you'll give it a whirl...please let us know what you think once you've tried it. We are lucky and have olive trees, so we make our own organic extra-virgin olive oil, which we prefer to use rather than the soya or sunflower oil in the tins. You obviously haven't got a Greek deli in your area, but..if you've got one... you'd find this pasta in an Italian deli for sure. Pasta is definitely not good for you, but that dish would be a beautiful cold pasta salad.

Pasta is not good for you? In the same way that perhaps rice is not good for you? And that bread is not good for you? Potatoes maybe? Don't diss an imaginative creative cuisine that has survived literally centuries. PS Carbohydrate = good, don't overdo it. Fat =good, don't overdo it Sugar - in all its treacherous forms and disguises = bad, don't touch it in any form whatsover. Ever.

Could you write down the name of that cheese you grated please? Also if locally unavailable, what other cheese could be used (for instance Pecorino Romano or Parmigiano Reggiano?)
With pleasure Peter..it's a type of greek cheese called "Graviera". Many regions in the country make it. It's similar to a hard Gruyere. If you can't source it where you are, then Parmigianno Reggiano would be a fine substitute. Thank you for watching and helping us grow our little channel!

Thanks also to the internet, I now have a list of 3 or 4 places near where I live (Montreal, Canada) that I'll be contacting within the next few days to see if Graviera cheese is something they have in stock. Montreal has a very spread out Greek community so something tells me I'm probably in luck. So meanwhile, Happy Holidays to you and your family and the very best New Year!!

@@Toscalato Thanks for the suggestion but finally I did find the Greek cheese (Graviera) but will now also source out Muddica to try the same recipe this time in a Sicilian style.
@petermccrindle1448 the cheese is called Kefalotyri or Graviera, if you can't find it then either Pecorino or Parmigiano will do the job, thank you for watching.

I love this recipe! I've made it a couple of times in the last few weeks and it's a big hit with the family. It's also quick, easy and with very few ingredients so makes a great midweek dinner that feels a bit special.

It certainly is Xristina. The pomegranate molasses make all the difference, but you could still do it without if you can't make or buy any. It's pomegranate season over here right now...so check out our video on how to make molasses with them and get cracking!
