It will definitely be a full couple of weeks of work! But super excited to have a trailer and possibly get Zeus put on it so we can get out and do some cooking.
Jealous man. Did ribs today and didnt turn out half as good.
Dude I feel like ribs just do that sometimes! I know the feeling, I’ll thank I got a good system down and I’ll just have an off day and the Q just doesn’t turn out. But always hope to get that perfect cook on the next one.

Good looking butts. Just pull that bone out and it's good to eat. When I break these down I wear about 5 pairs of gloves on each hand it's so hot.
Can’t wait to pull the bones out of these things and have the first big bite!! Yeah I typically wear insulators under my gloves, but sometimes it’s still I little to HOT. Super interested to see how these taste after being cured for a week haha

my dream cooker..did u watch the aaron franklin vid. on how he did his...how did u determine the size of hole to cut for firebox?...is there a reason for a bigger or smaller hole? very cool series of the build....thanks for sharing
Not gonna lie I’ve really enjoyed cooking on Zeus!! It is my my dream cooker as well. lol yes I have seen that episode… after the fact I had already did mine haha. To be completely honest, I just kind of eyeball. It got it up there and then just kind of kept cutting until I got it to fit. The bad thing is the first cut I made was too big and I had to add material back in totally could’ve took more time and did a better job, but I really just needed to get it together! And thank you! Low temp causes that. Never cook ribs below 200 deg not enough thickness of meat to handle low temps you basically have a smoke ring all the way threw in a sense. If you want true ham ribs cure them in a brine 1st then smoke kinda like pastrami but with pork. Been at this for a long time bub done did the trial and error for over 25 years keep going bud even the mess ups are better eating than most restaurants! I’ll give ya a sub for 100% try 👍
Hey, nice smoker, I think what you did was cold smoke them in a way too long, meaning you just need to bump the temps, up but ham is good too, Next vid do some more and with hotter temps, I think that would be a good idea!
Look great, but maybe could have waited until some meat pulled back on the bones before calling it done. Ham ribs sounds awesome 👏
need to ditch water pan and get a hunsaker basket and vortex for your wsm

That's an impressive smoker. I like the hinge design for the stack. Are you planning to put it on a trailer to be able to move it around later?
Thank you! I actually got that idea from looking at Moberg smokers. Got to give credit for credits due haha. Yes definitely looking at getting it on a trailer. I think I’m gonna have a local metal shop Build me a trailer seeing that that will be the cheapest option.

Yea in a couple of the videos, I’m still learn and how to edit and couldn’t get the voice and sound volumes quite right!
Where did you source your tanks?
Luckily, the company I work for has a propane division so I was able to get my tanks from them. But another good place to always look at salvage yards because when they get done with their tanks, they always take them to salvage yards. Hope this helps I know they are getting harder to find.

Hey sir. First of all, looks really good! I built a 120 gallon myself. At first I had my collector coming into my pit just like you. I know it’s a pain but I would cut the access metal in the smoker from the collector so it is rounded inside. It made a huge difference with airflow. I hope this makes sense. The air was getting trapped from the flat metal on the collector. Cheers.

Ooooo yes it was! If you can find one from a local butcher. It makes a big difference in the taste of the pork belly in my opinion.

Great video and good looking smoker. A tip for all that I also learned the hard way. When cutting out the doors cut the vertical cuts and just the corners of the horizontal. Then I hand bent the bars a bit so they where close. Then tac welded the top and bottoms of the vertical bands to the tank (extra long past the length I needed). Then tac to the door. Then cut out the horizontal part of the door. Let it cool all the way down and then cut out the vertical tac’s. This will keep the door from warping as much. Keep it up and keep the videos coming. Great work and be safe.
