Hello, homesteaders and those who are still dreaming about a homestead of your own...
Our family of two moved from Colorado to Missouri in the summer of 2019 to begin homesteading on our debt-free 4-acre property.
We didn't grow up on farms, but we are diving headfirst into planting an orchard, growing a garden, and keeping chickens and ducks.
The goal is to become less dependent on the existing food system and grow toward self-reliance.
Follow along with us to see our progress and the many hiccups along the way.

Homemade Mozzarella | No Rennet Required
Our first attempt at cheese making! We decided to try a basic mozzarella which uses just three ingredients: Whole Milk, Salt, and Vinegar.
We sourced a gallon of unpasteurized, whole cow's milk locally from a woman who raises a few dairy cows. Since we intend to have our LaMancha does bred soon, we figured we should probably get familiar with making cheese.
We did run into a snag with the curds separating from the whey, but even that problem proved to be an easy fix.
Join us and see just how easy it is to make simple, delicious mozzarella at home.

We have had such a great pepper year that we're preserving our peppers via fermentation! You can use any peppers you'd like for this easily customizable hot sauce recipe. It is indeed "The Year of the Pepper" as Dustin had hoped. We'll show you how we're making a small dent in our bumper crop of peppers as we smoke some Leutschauer Paprika Peppers and process them into a dried spice powder. We're also roasting sweet Ajvarski peppers and preserving them via pressure canning. While the smoker is fired up, why not smoke some sea salt, too? Thanks for watching!

La Mancha goats are in my opinion the very best dairy goats. They give the best milk and are these goats so sweet.

Good video. I think I'll try to find those paprika peppers that you recommend. I've been making paprika for years and I have a method for avoiding "clumping". First thing is, after you've ground your peppers, put them through a fine-meshed sieve. And another thing that helps to is re-dehydrate your powder and, once re-dried, put it through the sieve again. Cheers.

Looks like you might be watching yourself in your cameras flip screen. It takes practice and I see this is a little bit older video but just a helpful observation to try and look Into the lense frequency. I know a lot of people do this because they're afraid they won't be on screen or might lose focus but it's all good ♡ thanks for the info as well.

Why do we smoke sea salt? It’s tastes 😋 yummy!
I just put my brassica greens into a mason jar and add a lot of salt into the jar. Shake it for like a minute and put it into the fridge and wait for a week or two. Voila. NO work. LOL

I have 15 kilos sitting in my garage that has been fermenting in brine for 2 months now. Gonna blend it on the weekend. Cant wait.

@@EventheSparrowHomestead I have birds eyes, bishops crowns, paprikas and various others. About 600 plants in total. Just brine them in separate large glass jars and the belnd. Means no artificial additives except maybe a bit of vinegar and salt. Shelf life is long and taste is more full than unfermented. Do you have Instagram? mine is @motomotozimchilli

Do you use a Instant Pot to make your yogurt or how do you make yours?
@@EventheSparrowHomestead I bought a EuroCuisine machine and I also bought a Polder Cooking Thermo Timer and a Kleynhuis Yogurt Strainer Pouch. We're currently living in a 5th wheel and don't have a lot of room, plus I'm not the most patient cook and didn't want to make mistakes since the ingredients are expensive. I use whole milk, organic when I can find it...we live out in the boonies and don't get to town that often and our local small grocery doesn't carry that kind of thing.
We also lived in a travel trailer for a few months and know all too well the challenges of cooking in small spaces 😉

I've never been brave enough to try okra--if I did, it would probably be fried. Your fermented super greens look like they'd be something worth trying. BTW--this is Nell, the wife.
Hi, Nell! I think we're going to try growing just a couple of okra plants this year so we can try it fried. I've never tried it that way, but I've heard that if you just roll it in flour, it makes a nice coating with the juice (slime) inside the okra. Sounds delightful, doesn't it? HA! -Jess
You two must have "green thumbs." I'm salivating as I sit here in north central Idaho surrounded by snow this late January 2021. We LOVE kohlrabi...we just eat it raw--YUMMERS!
I feel a little silly now, but we didn't even think to try it raw. We'll have to give it a shot this year!
Your garden looks fantastic. I'm going to try lasagna gardening because we're starting new on our modern homestead and I've fought too many weeds for too many years to want to go through that any more at 70+ years. BTW--this is Nell, the wife.
We STRUGGLE with the weeds! If it weren't for the weed barrier fabric, there's no way we could have an in-ground garden. We added a few raised beds this past year, but little by little we'd like to add more! Would love to hear how the lasagna gardening works out for you!-Jess

Oh honey, there ARE Rats as big as cats or possums I had one about 40 years ago getting my basement and I reached down to grab him I thought it was my cat Oscar it was dark out and I snatched him by the back of the neck and was telling him off for getting in and digging at the trash and I moved my flashlight and looked and I had a giant giant rat by the scruff of the neck,!!! This mama went a little sideways over that!! Opossum's tail is a whole lot harder with slight rings around it than a rat's. I wouldn't want to get close enough to study it lol
😯 Oh my goodness! That just made me cringe thinking of that! 😳... Coming from outside of Denver to country life in Missouri has sure got us on our toes! We love it here even with all these creatures or rats the size of cats 😂

I love smoked paprika so much! For right now I just buy it at the Amish store near me in bulk as I don't have a smoker. This stuff brings a new level to beans and on your popcorn, gravies and sauces come alive. Thank you for sharing. As seeds get harder to get ahold of if you save your seed maybe a subscribers could buy some from you in the future when they aren't available to purchase elsewhere. Love your channel!!!
Thanks! We haven't ever tried the smoked paprika on popcorn, but we'll definitely try it... Most likely tonight :) We definitely found some new favorites this past garden season and we plan to save more seed this next year. Seems more important than ever.

I try to avoid the microwave. I pretty much just use it to heat canning jars full of water if I need to preheat my jars, but that's about it.
Love this! I had no idea that xanthan gum would do that, thank you for sharing! Fermented hot sauce is one of my favorites, you can't duplicate the flavor or heat.
We found a brand that has no other ingredients, just non-GMO Xanthan gum, so we gave it a shot. It's a miracle worker and it doesn't take much. :)
Love your smoker! One of those is on my list to get, hopefully next year! Hard to beat a good smoked paprika
It was a gift and is a bit fancier than we would have picked out, but love it all the same. Love that you can walk away from it without having to worry about monitoring the temp.

Can you just use regular milk from the store or does it have the be like, fresh farm milk? Was it worth the work? ;) looked awesome!
You can get it from the store but we think you have to use whole milk ( maybe you could use 2% 🤔) , it can be pasteurized but not ultra pasteurized. We have a local source of fresh Jersey cow milk. It can be a little tedious and will take roughly an hour to make but thought it was rather good, and of course you can put anything in it as far as herbs etc...we just wanted to try it plain. After being in the fridge a few hours it shredded nicely! Thanks!
