Shark Fin Crab meat recipe with tofu 蟹肉鱼翅豆腐(鱼翅蟹扒豆腐) is a traditional Cantonese dish with crab meat and imitation sharkfin as the main ingredients. The texture is similar to shark fin soup, as both thicken with cornstarch to form a thick soup/ gravy (羹) with crab meat, egg white, wine, and vinegar, among others

100g Crab meat
3 Egg Tofu
100g Imitation Shark fin
10g Dried scallops
Broccoli
Half pack Enoki mushrooms
Half egg white
Garlic
Ginger(1cm)
200ml scallop water+ water
Seasoning:
1 tbsp Oyster sauce
1 tbsp light soy sauce
1/4 tsp sugar
1/2 tsp salt
Dash of white pepper powder
1/4 tsp sesame oil
1 tbsp Shao Xin wine

      @@ngelaine2712 你好,不建议自行配粉难拿捏份量,普通面粉就是中筋面粉了,英文叫All purpose flour, 超市很容易就可以买到的。

      我用的是中筋面粉,中筋面粉的支撑度比较好,包馅料不容易破裂。低筋面粉过于软,筋度少比较难包馅。

      @@ngelaine2712 详细的资料和解说在discribtion box ,后面加入的花生油是用来防沾的,需要依据各人炒制的状况,出锅前若很黏可以慢慢1茶匙1茶匙的加入花生油。我加了大约有10克

    因麩質敏感關係,可以用米粉或玉米粉代替麵粉嗎?

      可以的👍后面水份要一点一点慢慢的加(半茶匙,半茶匙)避免成品过硬。混合好的粉整体手感是蓬松的像沙子那样就ok 了。
