    I would have dropped some pectinase in there at the start of fermentation. It breaks down the fruit and maximises how much juice you get

    Ive just started making wine recently. I stumbled upon your channel. I like your approach to this wonderful hobby. I currently have 20 gallons of apple juice fermenting. I'm going to be distilling it using fractional distillation (freezing). I'm trying to drive the alcohol content up. It's certainly taking a long time.... it's still bubbling. I also have blackberries in proximity to my home. I've accumulated approximately 2.5 kilograms of blackberries and there's still a lot of fruit on the bush yet. I'm looking forward to producing a large quantity of blackberry wine.

    Hey great guide, i notice you don't use campden tablets or pectolase, are these not required ?

      Hi Tempus, I'm glad you found the video useful. Yes, both are optional. I have never found the need to add pectolase, after the 3 months of fermentation my wine is perfectly clear. Campden tablets have 2 uses, sterilisation and killing the yeast. Both can be done via different methods e.g. sterilising fluid and pasteurisation. Happy Brewing!

      Thank you, I'm glad you found this video useful. The original song involves two guitar parts, so it is tricky to emulate on one single guitar. I felt like I did a good job with this though.

      Agree.You have found a happy medium playing both guitar parts on a single guitar which is ideal for spontaneous playing and campfire entertainment,keeping the playing as natural as possible.Of course there are acoustic guitars with a built in looper and a built in recorder but not widely available as yet but developing guitar skills is still foremost as opposed to effects.

    Lid must be off for the boil so the DMS escapes and doesn't condense on the lid and fall back into the pot. Made the same mistake for my first brew ;-)

    Wow. Kudos to you for trying your first batch of beer and putting it on RUclips with the title "How to make..." 😂 In all seriousness, not a bad first attempt. You realised that boiling rhe wort gives you a higher OG. Nothing to do with extracting more sugars, thats done in the mash, but what you are doing is concentrating the wort. My biggest concern with the batch that you didnt boil would be that you havent pasteurised the wort so could end up with an infection. Hope it turns out alright for you though. It's a pretty complicated science known as biotransformation but the hops arent adding any more sugars, but certain compounds in them can release more fermentable sugars from the wort. They are also acting as a nucleation point for the CO2 already in solution which is why you're getting the foaming. Enjoyable video. 👍

      Hi Harry, Primary Fermentation is quite an aggressive stage of fermentation. It needs to be done in something bigger than a 1 gallon Demijohn, otherwise things will get very messy. Also, after 1 week the fruit has to be separated from the rest of the liquid as it adds too much volume to go straight into a Demijohn. A bucket is the best and simplest option really.     bro, just add the whole packet of yeast.. Also, crushing the crap outta the fruit? with a potato masher? better extraction of flavor. love to see how you press this!

      Hi Robert, I only add the amount of yeast that is required. Any left over yeast can then be used for another brew. Crushing the fruit can add unwanted bitterness to a wine. As the berries have been boiled, stirred thoroughly and then left in the fermentation bucket for a week, sufficient juice and flavour has been extracted. Happy Brewing!

    Hi Jon im making blackberry wine from one of your videos. Im on secondary fermentation and its bubbling well but i have some scum at the top. I think maybe it wasnt strained enough, should i remove the scum or leave it?

      Hi Jayne, I hope you're enjoying brewing your wine. The little bit of "scum" I believe you are referring to is caused by "crousin". The foam that occurs at the top of the inside of the demijohn. You could clean it with a sterilised cloth, but if it hasn't contaminated your air lock, I would leave it alone. It is harmless and won't effect your wine. I hope this helps! Happy Brewing!

I usually use just boiled water from a kettle, but this method is a bit more technical and can help make a tastier and more stable wine! I'm very excited to see how this wine comes out!

      I like this idea, but I don't know if people on youtube would enjoy watching me taste wine? I guess if this comment gets enough likes, I will consider doing this. After all, I have just started another batch of blackberry wine :D Also, in one of my camper van videos I do enjoy a glass of wine near the end. I don't know if that counts though.

    What part of the house do you store it for three months fermentation?

      Whichever room is the most stable temperature wise (ideally between 20-25C). My bedroom at the back of the house is the most stable. During the winter months you can wrap your demi john's in a wine maker jacket or an old jumper. Happy Brewing!

    Don't fear the pectic enzyme, buddy....it's a natural product, and completely harmless. Use the enzyme, and keep hot water away from your fruit, and you will get your wines crystal clear. Hot water just allows the pectin to potentially "set" in your wine, and even pectic enzyme won't be able to clear it out. I gotta admit though, you have a pretty clear wine there regardless!
