As a cardiac patient, I have struggled with keeping my weight down. I have to be careful with exercise, as "pushing myself" can actually push me right to the ER. So, the exercise that is actually safe for me to perform is not intense enough to assist in weight-loss. Additionally, the super-restrictive diets like veganism, the keto diet and the low carb diets are dangerous for me because they push my body into a state of metabolic imbalance and prevent me from consuming the foods I need to keep my potassium, calcium and iron levels in check.
It wasn't until I underwent my last open-heart surgery in October 2014 that I figured out the right combination of nutrients for me, which is a diet that consists of approximately 50 to 75% plant-based foods. With this channel, I am bringing you the recipes that have worked for me, and hopefully a solution for other people, like me. Before making any major dietary changes, please consult a doctor to ensure the choice is right for you.

I absolutely hate a salad that isn't mixed up properly. I would definitely make this but I would also definitely skip the fancy display of on mixed veggies.

Thank you 😊 I have to admit that I had to take a moment and think about what you wrote. Honestly, off-camera, I usually hand-tear the lettuce, and typically prefer that method, so, I want to fist-bump you for being a fellow fan of the hand torn salad. 🥗 But, I am at a loss on knowing how the difference between hand tearing and cutting lettuce affects nutritional value. I can understand how it affects flavor and texture, but I have always assumed that the nutritional content remained the same either way. 🤷🏻♀️ I am a home cook and not a chef, so there is a lot of information about cutting styles that I likely do not know. If you have information about how cutting styles can affect nutritional content, I would be interested in looking into it.

Thought carrots don’t need peeling when we’ll washed or brushed.
I think you are correct that carrots don’t need peeling - it’s just more of a personal preference. I tend to peel the carrots because the outside of the carrot has a different texture than the peeled carrot. That being said, the most time consuming part of this recipe is peeling the carrots, so if you don’t do that, then this can be prepared in minutes!

Definitely. You can switch out the ranch dressing for whatever dressing you like. Vinaigrettes are fantastic on garden salads.
