a quick and simple pho tai (beef pho) using the Instant Pot!
Full recipe
Bones
- 2 lb beef soup bones
Spices
- 1 pod black cardamom
- 3/4 tsp coriander seeds
- 3-4 cinnamon sticks
- 1/8 tsp peppercorns
- 6 star anise
- 8 cloves
- 1 hand of ginger, unpeeled, halved
- 1 large onion, halved
- 1 shallot halved
Soup ingredients
- 10 cups water
- 1 tbsp salt
- 2 dried shiitake mushrooms, washed well
- 2 tbsp brown sugar
- 1 tbsp of white vinegar
- 2 stalks green onion
- Fish sauce to taste
Additional Ingredients
- 454 g package rice noodles, soaked in warm water for 30 minutes
- Thinly sliced beef (striploin, chuck meat or flank steak)
Garnishes
- Bean sprouts
- Cilantro
- Green onion
- Lime
- Hot sauce
- Pickled onions

Thank for the kind words and support!! In terms of a simple combination, fish noodle chicken dish, I don’t have anything upcoming that will be ready in time for lunar new year. Usually a simple e-fu /e mein dish that you can incorporate fish / chicken in work for me. You don’t usually incorporate both, but who says you can’t if that’s what you want to do!

Do you rinse the rice then store it for lunch?
You can rinse, add water and leave it until it’s ready to be cooked or rinse and add water just before. Either should be fine.
I never thought about using the itaki to sterilize items! Thanks for the idea.
Glad I could help! It functions the same as the sterilizer we used to have, just a lot less volume.
Giner and green union and 1 八角 1:29 6T soy sauce, 1T dark soy sauce 6T brown sugar, 2.5 C water, add 10 to 12 drumstick to 8 min high pressure, NR 8 min open lid, done.

Ok, chicken congee is like chicken arroz caldo (Filipino). This is my go-to when I’m sick…my chicken noodle soup.
Modify/add a few ingredients, and you have chicken adobo (Filipino).
I do like adobo! :)
Does steam release while cooking or only when you take the lid off?
A little will release as you’re cooking, since there isn’t a tight seal on the Itaki, but a majority will release when you open the lid. Just be careful, the steam is hot and can burn.
Hi. New subscriber here. Just ordered itaki pro but it hasn’t arrived yet. Please could I ask-how do you check safety of meat eg chicken being fully cooked or the same for reheating meat? Thanks a lot. Can you cook frozen meat? I’m intending to use it on tour as a musician. Normally I end up eating rubbish and feeling awful.
Normally I just cut open a few pieces and check to make sure fully cooked by looking for consistent colouring. Look for no red/pink. You could always get meat thermometer and use the indicated safety guidelines. And yes you can cook from frozen just make sure the protein isn’t too thick or else the meat won’t cook evenly/thoroughly. Normally I do thaw overnight though.

I can’t wait for my itaki to arrive. Do you have this pho recipe where I can follow the written instructions. Can I add all the ingredients at the start of my shift n cook it at the start of my shift at work n it still be warm? I usually only get a 30 min break so I’m concerned that it may take 30-40 min to cook if I start it on my break. Unfortunately I can’t leave my work space early to turn it on n come back to it. Any helpful tips n suggestions are greatly appreciated. Thanks in advance.
I love soy sauce but it makes me retain so much water. I can tell the next day how puffy my face and hands are. It's so unfortunate since I love Asian cuisine
Your rieu is way too watery which is why it broke off. You didn't have any meatballs in the bowl...I only see crumbled pork ahaha...the meatballs should float up when it's done.

Thank you for your recipe. I'll use some of your spices and your air fry instructions. I'm experimenting a Cantonese dish called "Chu Hou Kai". It's fried chicken, then pour a mixture of Chu Hou sauce over it. Hope it works. Thanks again.

Love the recipe. I’m not sold on the pot because cleaning looks to be difficult without the ability to remove the cooking container. I don’t want to accidentally get the electric parts wet.
