    I have just started watching the video, and I am wondering about the "pork chap". As "chap" means, a guy / bloke/ male person / a male you know but is not a dear friend / a neigbour etc. (all being male), but its not cut of meat. I dont want to make fun of you, and I am not a native english speaking person either. I once was in a very embarrasing situation, with several women and just one man, all of them but me, with english mother tongue. I said to the man, "your are the coq in the basket" (coq = a male chicken in french / and the saying means that the man surrounded by several women should be very flattered for getting so much attention from ladies who just want to be nice to him, without any sexual meaning). But of course, everybody else, understood that he was the "cock" (=penis) in the basket). I still blush when I think about this, but I can now also laugh about it.

    A personal question, and you of course dont have to answer: when you are not filming, is your wife also cooking, or is it always you cooking ? With my parents, it was my mother who was mostly cooking. My late father would cook certain dishes (like cheese fondue) and he would sometimes cook on sundays, and try out new recipes from all over the world and spend hours in the kitchen preparing them. But for everyday cooking, always my mother.

      @swissfoodie3542 That's a wonderful story about your parents. In my family, my wife usually does the cooking. I like cooking, so I'd like to cook every day, but I get home very late on workdays, so my wife does the cooking. The day we filmed the video was a holiday, so I did the cooking. @F_M20 I also think that whoever in the family cooks or cleans is fine.

    The croquettes looks really tasty. I dont deep fry at home (because I dont like to handle a lot of hot oil, and because of the smell). So when I want potato croquettes, I either eat them in a restaurant, or I buy made croquettes that you can keep in the freezer, and warm up in the oven. They are very tasty, and less oily than the deep-fried version.

      I thought that potato croquettes were a dish that was only eaten in Japan, but that's not the case. Deep-fried food is nice and easy to eat at a restaurant or to cook in the oven with frozen food!

    I know the focus of the channel is the recipes and the cooking itself, but perhaps a small series on cooking tools and techniques would be nice. As a cooking novice living in the west many of the cooking tools, like the cool grill used in this video, or even basic techniques like how to properly wash and cook rice, are lost on me at times.

    What an interesting dish. I have never cooked with okra, and have only eaten it in the Indian Subcontinent so far (India, Nepal, Pakistan and Sri Lanka). I found it to be tasty, but also very slimy (which you can see in your video as well), and therefore I dont really enjoy it. The soup sounds good, but they way you do it, I think that the vermicelli and chinese cabbage will be very much overcooked by the time the carrots are also cooked. So I would add those ingreditiens later on, to avoid overcooking (which is something that I really dont like at all). Thank you Sho for another great video. I am happy to see that you get more subscribers. You are doing a great job, and I wish that you will get more subscribers and more happy watchers like myself soon.

      In Japan, there are many ingredients that are slimy, such as okra, natto, and grated yam. I like these ingredients, but I also understand how people who don't like them feel. It's true that this soup recipe would result in overcooking. I like the ingredients in the soup to be well-cooked, so I made it this way, but of course you can adjust it to your taste (I like stir-fried vegetables to be crunchy, not overcooked). Thank you for your wonderful comments. Thanks to you, we're gradually gaining more subscribers and fans. We'll do our best to make videos that make more people happy.

    This looks like a good stew for winter time. I always like ginger, but I especially like it in winter time, because the taste and smell of it, feels like its protecting from flues etc. P.S. One thing I noticed when you make miso soup: you have large containers for miso, but always individual small packages for dashi (instead of also having it in a big container), is there a reason for it ?

      Thank you for your comment. Ginger is a wonderful ingredient, warming when cold and refreshing when hot. The reason for the large container of miso is that the larger the container, the lower the unit price per weight and the more economical it is to buy. And as you know, we frequently make miso soup and miso-flavored dishes, so we use it up surprisingly quickly. It would be nice if they sold dashi powder in large containers, but the products we use are only sold in the size we usually use. (They do sell a larger size if it is a different brand, but it is not our favorite flavor.) The dashi powder comes in 7 or 14 packs of our usual sticks, and we try to buy the ones that contain as much as possible for the best price.

    I look forward to cook Oden, because it seems amazing for a cold winter day. Also, it seems so simple to prepare it. Just to be sure: if I want to add potatoes or vegetables like carrot, broccoli or cauliflower - I cook them in water and add them to the Oden soup, when they are fully cooked, right ?

      That's exactly right. You should blanch the vegetables and then add them to the soup after they've been cooked. If you add potatoes to oden and leave them to cook for too long, they'll fall apart and the soup will become cloudy, so be careful.

    I can not lie, grating the potato is kind of genius! I have made soups like that with leftover mashed potatoes but it tends to make the soup really heavy from the butter and cream, this would be great if I wanted a lighter meal! Thanks for the inspiration

      Thank you for your kind comments! The soup made with mashed potatoes also seems delicious, but this soup is easy on the stomach because it contains neither butter nor cream.

    For me, it is so interesting to see someone from a different culture use the same ingredients but come up with so different recipes. I never thought about grating potatos before and will definitively try this cabage soup. The salad idea is also very interesting because I only know it prepared in a wok but with the microwave, this is so much easier and foolproof. ありがとうございます!

It's fun to learn about different ingredients from different cultures, but it's also really fun to learn about how to cook the same ingredients in completely different ways. The cabbage soup is thickened with grated potato, and it's really delicious, so please give it a try.

    I like to cook with potatoes a lot, but the dishes in Switzerland are so different. We would never eat rice together with potatoes, and its also very unusual to have 3 different dishes with potatoes in the same meal. Its really interesting for me to see, how potatoes are used in japanese cuisine.

      My version of potato soup: cut leeks into small pieces, heat up olive oil and cook the leek for about 20 minutes very very slowly, so that it gets sweet and soft. Add chopped garlic and some butter after about 5 minutes, and chopped raw potatoes after 15 minutes. Add some vegetable stock, 2 bay leaves, pepper, and cook untill the potatoes are cooked. Remove the bay leaves and puree. Add stock untill its the right consistency, and a splash of cream. Serve hot, with fresh bread and or/or some hard cheese like gruyere.

      Two other favorite dishes with potatoes: "Gschwellti": boiled young potatoes (skin on), served with different kind of swiss cheese, some dried or fresh fruits like grapes or figs and some walnuts. And rösti (google for a recipe). Which you can top of with a fried egg, grilled tomatoes, melted raclette cheese, grilled bacon, grill onion or a combination of those things. Serve with a green salad for a bit of freshness.

      Thank you for your comment. In Japan, potatoes are considered a vegetable (although they are carbohydrates), so they are often eaten with rice. I've googled the recipe for rosti. The potatoes look really delicious, crispy and crunchy!

      If I wasn't Japanese, I would probably wonder about this gluten thing too. It doesn't have any taste of its own, but it soaks up the stock from other ingredients and is very delicious.

      Thank you for your comment. In Japan, we have the concept of a menu, and we think about the quantity and balance of the entire meal, not just one dish. Furthermore, we don't just think about one meal, but also consider the three meals of the day as a whole. We'll do our best to upload more interesting videos in the future!

    I love dumplings of all sorts (gyoza, siu mai, jiaozi, mandu, manti, ravioli, pierogi etc.) - no matter where they are from, and what filling they have. I prefer steamed dumplings over fried ones. The only technique I knew so far for steaming "asian" dumplings, is in a bamboo steamer. To steam them over a vegetable like you did here, is a new idea. I bet it tastes great, because the cabbage will add some flavor.

      I like dumplings too. It's a bamboo steamer called a “seiro”. At Taiwanese restaurants, they often steam dumplings in a seiro. At home, dumplings are usually pan-fried and steamed, and shaomai like the ones in this video are often made in a metal steamer.       You can use onions instead of lotus root. However, the texture of lotus root and onions is quite different. Even when cooked, lotus root is crunchy. (I don't know the English onomatopoeia, so I'm not sure if my description is right, but...) I don't know if you can get yacon in your area, but the texture of cooked lotus root and yacon is similar, so if you can easily get your hands on yacon, you might want to use that instead.

    I am not usually a fan of cooked salmon at all, but in this recipe it might be actually quite good. As it is "dilutated" and mixed with rice and so many beautiful mushrooms. We dont have most of this mushrooms in Switzerland, but I know that I can switch them with other ones (which you probably dont have in Japan). Different cultures, different eating habits: I dont think we would ever eat one fish (tuna) with another fish (yellowtail) in the same course or even meal. That makes it so interesting for me.

I have never heard of Kiritanpo - is the flavor of rice (just in a totally different consistence), or is there some other flavor to it ?

      The rice flavor comes from the fact that the kiritanpo itself does not have any salt or soy sauce flavor. And because it has been grilled, it has a delicious aroma. It may be similar to the flavor of grilled rice cakes. (Rice cakes are called mochi, and are made by cooking sticky rice, mashing it, hardening it, and then drying it. They are often grilled or used in Japanese sweets.)
