400g Heavy Cream
350g Whole Milk
150g Granulated Sugar
50g Glucose Sirup (Can be replaced 1/1 with granulated sugar, but will be more sweet and less smooth)
1tsp Cremodan (Commercial Stabilizer, Optional)
50g Freshly Grated Pamesan Cheese (NOT the pre-grated bagged from the store)

    Hello, I am a new musso 4080 owner. BTW! Your PB video is a great success. I have a few questions. I hope you won't mind. Why use the skimmed milk and milk powder but not whole milk like the other video you put out? Can I use the 140 grams of the sugar instead of 40 grams of glucose syrup? I understand that the locust bean gum is used as a thickening agent. The first ice-cream i made is using fresh strawberry and, i didn't put any of it in the ice-cream and it came out not as creamy as i desires. So if I put in the gum it will makes a difference with the end result? Thanks!

    When I make this (following your recipe), my Lello Musso 4080 (purchased just 2 weeks ago) only requires like 16 minutes. If I go more, the layer that forms on the bottom of the bowl becomes very icy and thick. I thought you also had this machine? How can it be so different? Is my machine a newer version? Or is it the ingredients that might differ? I live in Sweden btw so ingredients should be similar.. though I don't know what you mean with "whole milk", I use Arla Standard milk (3%).

    Is peanut butter paste any different than smooth peanut butter? I prefer to make things myself when possible. I usually make my own PB, will that work with this recipe?

      I don't think so. I think they just wrote that to emphasize that they meant paste as in smooth, and not the chunky peanut butter. The recipe in the description only says peanut butter. Keep in mind that OP is from the Nordics and peanut butter here doesn't have a religious status as in the US :P So wordings used might be different :)

    600 for a machine that you still have to freeze again save yourself 540 bucks and just get a regular compressor ice cream maker 😂 . Seriously though that’s a lot for a machine that doesn’t literally do everything. What’s the difference in that and just making it without a machine and freezing it?

      The short answer is no, the recipe that inspired us did'nt call for it at that time. And yes, it would most likely improve the result👍🙂

      Thank you for watching❤️ You can either hear it when it starts struggling or when it's like soft serve consistency, dig in and check it out. There is no golden rule about how long it should take, it's all a matter of temperature of the base when poured in and room temperature etc. ❤️

    Hope we will see some more wonderful recipes soon. Here it's heavy cream and previously it was cream. What is the fat content of 'cream' in your recipes please? Do you have any experience of the Ninja Creami? Dana Cree alluded to the fact that when she worked with the PacoJet she had to rethink her ice cream recipes? Do you think your recipes will work without adjustment in a Ninja Creami? Many Thanks

      Hi Victor.. Here in denmark heavy cream is 38% or if we are lucky double cream with 50% We actually have a Ninja Creami waiting to get unboxed.. ♥ Regarding if they would work in it, I see no reason why it should not. ♥ But I am no proffesional, so it will depend on a test :) :)

    Hi. Thank you for this unboxing video and your ice cream recipe videos. I have purchased the Lello 4080 off of Amazon.Though my ice cream maker was delivered more than a week ago, I have not taken it out of the cardboard box it arrived in, yet. Only checked for any external damage during transit. In my part of the world the grid voltage is 220V while this equipment runs on 120V, so just waiting to set the servo step down transformer before I attempt to use it. Bro, in a few of your recipe videos, I noticed you mentioning about increasing the paddle rotation speed. I do not see any option to vary the RPM. Sorry if I may have overlooked. But, is this varying RPM a manually adjustable feature or is it an automatic process. Once I set up the Lello 4080 I would be trying your vanilla ice cream and the mango+vanilla recipe. Will let you know how it turned out. Do post more recipes and maintenance related videos when you find time. Thanks, again.

      Hello and thank you for watching. If I have said so about the RPM I must have spoken wrong as there is no such option. There are bigger musso's with bigger containers but they run on slower rpm and thus not whipping as much air into the ice cream. Sry to hear you got a 110V version. :(

      @@metteandjesper , Hi. The Lello 4080 is awesome. The build quality is good and simple to operate. I tried your vanilla ice cream recipe and it turned out very nice. Only that it was a bit too sweet for my taste. Will use half the amount of sugar, next time. As for the power, I think the Lello Musso 4080 has just one version, that is, 115V. That is not a problem for me since I have a 3Kva step down servo stabilizer. I have other appliances like coffee bean roaster, vaccum sealer, food dehydrator etc., that run on 120V power supply, so I invested in a decent step down transformer. But my main gripe is that I need to pay more than twice the amount of the product for importing any appliance to India. The ice cream from the Lello 4080 is so yummy and delicious. Also, the machine is very easy to clean. Your video on cleaning the Lello was quite helpful. Do upload more recipe videos when you find time. Your recipes are simple to follow and the resulting ice cream is creamy and tastes good. Thanks, again.

      I dont think it will hurt to half the sugar, but be aware that it might become more solid if you put it into the freezer. You could substitute with honey or mable syrup if thats better for you :) sry for the late reply and thank you for watching ♥

    Hello, I love watching your videos. May I ask a question and excuse me for being naive. My wife and I own a small school and she always has dreamed of occasionally making homemade ice cream and treating the kids on weekly basis. Musso 4080 or Musso Stella Chef or perhaps Musso Club... How much ice cream can you make using the Musso 4080 ...meaning 1 kg per hour? Could you say how many scoops would a kilogram of ice cream come out to be? We have about 250 students and my darling wife wants to have 5 or so flavors available to choose from which I assume would mean making 5 different batches, correct? If you would be kind to give me your take on my small conundrum, I would be forever grateful. Lev

      Hi Lev. Thank you for watching and your question. Sounds like a wonderful idea about treating the kids :) :) I would say that if your ice cream base is precooled you could probably run about 800ml per 20-30mins. The number of scoops depends on your generosity :) Just like going to the ice cream shop, some make em big, some make em not so big :) I have no experience with the Stella and Club, but their size is greater and will make bigger batches, depending on time at hand you can easily go with those :) If its only occasionally and time is not an issue I would prob go with the stella as its almost a double up in production compared to the 4080. If money is not an issue I would go with the Club as you can make 6kg per hour and give the kids freshly made icecream, instead of premade icecream served from the freezer = much better quality :) Good luck with the project hope your wife will live out her dream & hope my answer was any help to you :)

We have ordered the Zara Club from Italy and are waiting for it to be shipped here (7-10 days), which of course probably will be longer of course since few things really happen as advertised. Another thing - OMG The gelato ice cream dipping cabinet are beyond this world expensive. My wife wants to get a dipping cabinet with 12 to 18 flavor holding and these run $15000 and up. I thought premium ice cream like from Cold Stone or Ben and Jerry's was expensive because of the ingredients, but not only that, the darn refrigerator costs a small fortune. I joked with my wife that rather robbing a bank, baddies should steal the refrigerator from their local ice cream shop. But all jokes aside, I never really knew much about the care needed to make ice cream and like most, enjoyed it occasionally. I recall going to my local Cold Stone in Montgomery, Alabama and watching with amazement as they would mix the different scoops of ice cream and add all the endless toppings. In regards to the dipping cabinet, I have decided to look locally in Vietnam. I asked my wife to try to find a restaurant that may be selling used equipment that they no longer need. These dipping cabinets are critical to the ice cream - meaning you can make the best ice cream using Musso but if you can't keep it at the required temperature, it won't be any good. Congrats on the purchase, I have no idea about the costs of running a ice cream shop yet, but hopefully in a few weeks I am much wiser as my wife and me am looking at a franchise and am planning a meeting with that company.. We are quite excited both of us :) And you are right, the Ice cream is best right of the Musso.. :) If stored in -18c its just not the same experience :) Hope you find some cheap yet good refrigerators so you can make your wife happy :) Happy wife, happy life :)

    Love your channel. Your demonstration has made me keep on building up my eager and want to buy this Musso ice cream machine. I particular like the fast forward that detailing showing the different stage how the whipped ice cream looks. I think I will continue try hard to convince myself to stretch hard with my finance to buy one in the future. I was actually had an eye on a domestic second hand one (10 yrs old already) and also a leased 12 commercial used 2nd hand, but doubt that might be risk whether the machine will last long or do the job properly. So, I think I better buy new one instead. Just cry one night for the big hole in my pocket but then will benefit the rest of at least 20 years great time making yummy ice cream!

      @@metteandjesper Yes, I brought. Successful because I follow your method. I have just brought ice cream stabiliser and tried once. Not quite sure how to use it correctly. I want to get an ice cream texture better when I make green tea and sesame ice cream. What is your recommendation?

    I hope you can help me to answer this: I am struggling making a decision which should be the best choice- buy the second hand that used for 8 years already (half price but no warranty at all because it is from domestic user private sale) or to buy a retuned after commercial leased ended 12 months? (Still pay 2/3 of full price but have 3 month’s limit warranty) Or simply buy a new one because second hand has risk not working properly such as the compressor problem not cooling down the temperature enough to make the ice cream? How long is the lifespan of this machine? When use commercially and use domestically such as once a week etc? Thanks!

      Hi Wendy :) Thank you for your question. I would always buy new because of the warranty. Dont know about lifespan but ours is still holding up, would'nt really recommend it for commercial use, unless you only plan to do small batches with limited customers :) Kind regards

      oh, here we have just 38% cream also called whipping cream on the container. Pro's can get 50% or double cream. We use the 38% version :)

    The 4080 model with Amazon was discontinued and they didn't know when it would be back. So I really splurged and went with the Lello Musso Pola 5030 Dessert Maker! Are you familiar with that model? I'm assuming the settings would be the same? Thanks so much for the recipe...it'll be made soon here! :)

Thank you for watching :) Did'nt know the 4080 was discontinued :( It looks like there are still a few to get here in Denmark :) Congrats on your purchase, I'm not familiar with that model but I assume its just like the 4080 just bigger bowl and sligthly lower rpm 76 vs 80 on the 4080 :)

      @@metteandjesper HI thanks for the response! My Lello arrives today so I'm all excited! I don't know if the 4080 is discontinued in the US. But Amazon said it was currently unavailable and didn't know when it would be available. I'm new to making premium ice cream so I've been trying to learn what separates the various qualities of ice cream. I know the goal is for small ice cream and less air and am learning the techniques to achieve these goals. From what I've learned two of the most important things are how cold you can get the bowls and the rpm's of the blades. I hadn't realized the 5030 had a slightly less rpm. Hoping the difference is negligible. But I'm hoping with a slightly more powerful 250W motor helps. One quick question. I've seen where people use a thermal gun to measure when the optimum time to take the ice cream out. Do you use a thermal gun? And if so, what temps do you shoot for with the ice cream? Thanks for the info! :)
