The Recipe
MUFFIN:
1/2 cup butter
1/2 cup sugar
2 eggs
1 cup plain yogurt
1/4 teaspoon salt
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
FILLING:
1/4 cup brown sugar
1/2 cup cinnamon
1/2 strawberry jam
Preheat oven to 375°F. Drop paper liners into muffin cups.
FILLING: Mix brown sugar, jam (if using), and cinnamon together for the filling. Set aside.
In mixing bowl add butter and sugar. Beat in eggs, yogurt and vanilla. Sift the dry ingredients and add them to the butter mixture.
Spoon 1 tablespoon batter into each muffin cup. Follow with one tbsp. of the filling. Top with batter.
