PERSIAN BARBERRY RICE WITH CHICKEN 🇮🇷🍗 (Zereshk Polo Ba Morgh)
Persian Barberry Rice with Chicken (Zereshk Polo Ba Morgh)
Ingredients:
5 cup basmati rice
Saffron
Dried Barberries
Pinch of Sugar
Butter
Chicken any cut 1 kilo
sliced onion
minced garlic
freshly rushed grind tomatoes
Tomato paste
turmeric powder
Coriander powder
Paprika
chili powder
Cooking oil
Salt/pepper to taste
Wash basmati rice until clear and soak in water for at least 30 mins to 1 hour.
Grind saffron with pinch of sugar with a mortar and pestle, add it to 5 tablespoons of hot water and set it aside to bloom.
Clean and wash barberries and set aside.
Season Chicken with Salt and Pepper, Pan Fried the chicken on both sides in a little oil until it is just golden in color then set aside.

I didn't realize there was so much onion in Bulgogi 😮 but the end result looked delicious

Bulgogi is too dry for rice and use spoon for eating Tteokbokki is too much water and no sesame oil Bibimbap for no cucumber and mushrooms
