This was the first year I barely had the opportunity to drink Ethiopian coffees. A huge bummer, they’re always my favorite but I just haven’t had that revelation cup yet.
Yeah, it's been a weird year for Ethiopians. Like we said, maybe we need to try more of them to find the one, but strange.
Clear and simple. I especially appreciate the tips at the end.
That's what we were going for
For those worried about prolonged hot water contact with plastic leaching with the regular Aeropress, theres a fantastic solution I've been using with stellar results with an alternate brewing method using the original Aeropress. So simple and it's actually way more efficient than the regular way using a lot less grounds to get the same strength coffee. So simple, just boil enough water as if you were brewing to the 1.5 or 2.5 mark in the Aeropress but instead of putting it in the aeropress, just add about 1/2 to 3/4 scoop of grounds to a glass or stainless cup or 12-20 oz milk frothing pitcher and add the boiling water to the same vessel. What you're doing is brewing outside of the Aeropress in a non plastic container, and after it cools, then transfering and pressing it thorugh the Aeropress. The beauty of this method is you can leave the coffee brewing as long as you like and let it cool down to room temperature and get maximum extraction without bad flavors. Then after it has cooled, pour it into the Aeropress and press the cooled coffee. What you've made is a cooled down strong espresso type shot that had only a few seconds of contact time with the plastic. Now you just boil some water to add creamer to or steam some milk to dilute and bring the coffee back up to hot drinking temp. Seems to taste just as good as Brewing the regular way to me, if not better. The verdict is still out on that and I need to do more trials with various types of coffee. You can also use this method to Brew several batches in advance and store in the fridge for coffee concentrate always ready to use.

This geisha variety is new to Papua New Guinea. Many farmers like it but hard to get the seed or seedlings

In this recipe, we're going 211F. Can't tell you the TDS since that can fluctuates depending on several factors. Also It wouldn't really help much since everyone is working with different equipment, water, and so on.

I played with the breville barista pro for a while. It's a great machine for the price. I'm more concerned that if something breaks, its hard to fix and usually you're SOL. It was one of my reasons for going straight to a more prosumer machine first. Buy once cry once I thought. Though I ended up selling my pro 500 (though for $200 less than I bought it) and got a great deal on the Drive.
What did you end up getting after selling your Pro 500? The pro 500 is a great machine.

The pro 500 is definitely great but I found my self making milk drinks more often then I thought I would to practice latte art (still no where close to Serge's level 😅). I found dialing ina. Coffee was a bit tough with the HX since some coffee I liked at lower temps, but I needed the higher temps for better steam so it was just a little annoying switching between the different temps on the HX.

I’m rocking a bambino, with a dimmer, 2 varios. Cheap in cost, and I get some of the best espressos around. And it heats up basically instantly. Catering we use a spaziale Vivaldi, and I’ve worked on bar with LM líneas.
The varios crush. Especially the updated versions that are like baby Fortes which is also an underrated grinder.
So true. Varios are def underrated. The steel burrs are v versatile too. From 9 bar shots to sprovers, and filter, they slap even for being “small”
I started with a Hario v60, Hario stovetop kettle, a Baratza Vario, and a scale. I use the same setup to this day except I upgraded my kettle and scale. Next I’m looking to get the Weber HG-2. I think unless you’re willing to bring a cafe setup home, simply enjoy the espresso when you’re out of the house. Save that money to tip your barista.

12 clicks on the Comandante is about 10-12 clicks finer than I use for pour over not a few notches finer.
Going a few notches finer than pour over was just reference point for those who are not using a Comandante. My pour over is at 16 - 18 clicks so for me it's not too far away
@@MirrorCoffeeRoasters Fair enough it's not that much finer than Comandante's own chart at 20-35 for filter. But I guess you go that fine if you have super light Scandinavian style coffee like for example from Drop coffee in Stockholm Sweden.

James Hoffman covered the aeropress and determined the inverted method didn't make the end result taste different enough to taste a difference. I confirmed the same in my own testing. Are you actually able to taste a difference to the coffee in a blind test?
I did watch that Hoffman video and although I haven't personally confirmed the test, I trust his pallet. On the other hand, I went with an inverted here due to adding water first and coffee grounds on top. If done regularly, you'll probably get water dripping before it helps extraction
For me, learning that I have the freedom to dial outside of what is the current suggested parameters ( 1:17, 205F, TBT 3:00-3:00) Cupping to know what potential a coffee has is helpful when brewing the coffee. Some naturals taste like brown water at 1:16, so lower ratios (and temp) can work well. The shop I worked at bought coffee in such a way that we always had coffee that was very fresh. I tried talk with with management, but they didn’t take any input. Trying to dial spro 3 days off roast is a challenge…
Lower temperatures and ratios seem to help naturals a lot especially since sometimes they need to be roasted a little further. That sounds like a disaster really. 3 days off roast and your espresso is pulling inconsistently and probably coming with some weird off flavors you have to settle for

Tried about 10 different championship recipies and this is by far te best one. And you dont need to be in a hurry during preparation. For light roast my grind size in 52 (from dial 0, not absolute 0) on my Kingrinder K6. How would you start dialing in medium roast- going slightly coarser or lowering temperature?
Thank you! It is a very simple recipe that does let you relax a bit. You can also use just about any kettle with temperature control. That's a great question. The liquid on the floor is to soak your feet in to prepare for the incredible coffee you're about to brew.
Excellent episode guys! I'm curious what you think about the roasting approach for anaerobic washed coffees. I roast at home on the Bullet, and I know how to adjust my roast style for washed vs naturals/honeys. But I've never had a chance to roast an anaerobic or fermented washed and I'm very curious to try it. Do you think it's best to approach those as any other washed coffee or do you need to ease up on heat like with naturals to preserve the fruit flavors?
Take a cup and fill it with the green of a coffee you've had success using a lot of heat on. See how much that green weighs. Fill the same container with your anaerobic green and weight it. If it weighs less, use less heat.
James! Thanks for listening to the pod and glad you enjoyed this episode. Really great question... We approach anaerobic washed coffees pretty much the same as washed coffees. Occasionally, which I assume matters on how intense the anaerobic or fermentation is, they'll behave closer to naturals. For most of the coffees though, roasting them like a washed coffee should do the trick.

We're honestly torn.. We get a handful of roasters reaching out for roast help and advice, however, we also have a lot of the business side to take care of. We'd love to at some point lean into that and tailor resources that help home roasters and those getting into the craft. It's also very hard to discuss all the variables because they're intertwined with not many "blanket statements" that are helpful across the board if you know what I mean. It takes a lot of context to be understood before we can dive into that. That all being said... we will do our best to add more specific content for home roasters like yourself. You guys talked about decoding a coffee bag/label Makeworth currently has a Wilton Benitez Red Bourbon, but on their websites it just listed as a Colombian red bourbon. I bought it because I knew the caliber of the producer.
That's awesome and hope the industry moves more in that direction, even though it's hard to find "famous" producers like Wilton. Seeing a familiar, skilled producer is always a very good reason for me to buy a bag! Also, heck yeah! buying some coffee from Makeworth, here in town!
In the future brewing recipes will be driven by density and roast degree scans that determine perfect temp/time/turbulence for extraction.
That's an interesting thought! Pairing that with one click, automation, we can be getting very delicious coffees with little effort. At that point, the emphasis on coffee and roast style is even greater.
