How long do you let the gesso set and how long do you let paint set before laying down masking tape? I’m always worried about pulling up bottom layers
Gesso is worth letting set several hours or overnight if you can. I usually gesso canvases the day before I plan to use them, and I gesso several at a time so I always have some ready. But standard acrylic paints can be taped over in less time. What I don't often show in videos is that I use a small fan to speed up drying. Using the can, I've sometimes let paint layers dry as little as 15-20 minutes and taped over them without issue. Just keep in mind that there are other factors that can affect drying time, like the specific type/brand of paint, if you use any paint additives, the thickness of the paint layers, etc.

What stuff did you put on first?
The canvas is pre-primed with white gesso and then the first thing I did was put a very wet coat of white acrylic paint down to create a water base for the blue that comes next. This is intentionally very wet so that the blue and white/water mix and flow.
Beautiful, How did you do it to get such crispi lines and edges when removing the tape? Did you use any medium mate?!
that was why they painted over the tape with the background color first

It's a printmaking brayer so I think it's considered a hard rubber roller.

Yes, mostly. The only part that would be problematic is the tape stuff, you'll have a really hard time creating good clean tape lines on brick due to the uneven surface. But everything else, the brush work, stencil, spray paint, etc., could be done on any surface.
