    Leftover rice is really easy to dehydrate at home and it reconstitutes well. That way you can use any kind of rice you like. If you add oil when you cook the rice it doesn’t dry out with the rice, it just stays on the surface. This doesn’t seem to effect anything.
    Also if you grind dehydrated cooked rice by hand or pulse in a blender it’s almost congee texture when you cook it with out additional stirring or whisking needed. I like to leave a little texture rather than blend it too fine.
    You can dry green onions or any other toppings as well, even meat. You can even dehydrate it raw and it comes out cooked (use a recipe) it can be pasteurized after it’s dry if your concerned about it.

      I came here to write that, but you already covered that blending the rice in advance would save so much time and fuel on the trail to get to congee texture.

    YES! I love congee but never thought about it as a backpacking meal. Great vid. I skipped to the end to see what the finished meal looks like before I watched how it’s made. Maybe a preview would be helpful!

    I make congee all the time at home. Didn't think to bring it outdoors, but you're right it's perfect! Thinking about precooking the rice at home and then dehydrating it so that it breaks down faster and you don't have to boil as long.

    I wonder if you could cook it most of the way in the morning then keep it in a thermal food jar for the day to almost slow cook it.
    I discovered the joy of congee after a trip to Indonesia. Thanks for this idea!

    Clicked cause I thought you were Tim Delaghetto 😂 but stayed cause I love backpacking and finding Asian recipes to eat outside! ❤ Also I wonder if anyone has cold soaked rice then boiled it to save a bit of fuel? For some reason my stomach does not like instant rice 😢

    It's interesting how rice is a morning comfort food in Asian culture. In addition to all the other non-traditional breakfast foods that become part of the meal. It does make sense, though, because rice is so versatile and can take on so many different flavors. I think I'll start out small one morning with a fresh bowl of rice topped with a fried 🍳 and some biscuit gravy.

      The versatility of rice is the key I think! One of my favorite morning breakfasts is steamed white rice, a fried egg, topped with a seasoned soy sauce and green onions! Its perfect!

    What is do is blitz half the rice in a food processor coarsely at home before I pack it up. It mimics the texture of instant congee that you can buy at the Asian grocery.

    Question, could you pre-soak the rice while you’re waking up, would that reduce cook time and or help to break the rice down more?

      I think pre soaking the rice would totally work especially if you’re there for a day 2 trip. I’ll have to test it to be certain but I think you’re right!

    I haven't tried it myself, but I saw somewhere if you boil the rice, not sure whether it was also fully cooked or not. Then freezing it overnight. The moisture in the rice grains breaks down a lot quicker when you eventually make it into congee. I wonder if the same principle can be used with the instant rice.

      ​@@campwithcolIt's a breakfast porridge that's essentially coursely ground rice. Cooks up in minutes and has a pretty creamy consistency. You should check it out!

    Why are the pickled vegetables for students? 😅 I love congee though. You don’t really get instant rice as such in the UK (you can get cooked rice in sachets but they’re heavy), I wonder if you could soak regular rice for a shorter cooking time as an alternative. If I cook it at work, I normally put it in a thermos with hot water to pre-cook the rice so I only have to finish it in the microwave, but I’m not sure I’d want to carry another bottle.

    No longer a backpacker....so weight isn't a concern for me but.......maybe try one of those amazon battery powered milk frothers? It's small enough in grams

    you might be able to get some ease of use by getting the powdered form of bouillon in the big bottle/container and just combining them with the rice+mushroom in advance. but also a like+follow from me because doing congee for camping is brilliant.

    Other than that nasty-ass shredded pig carcass you put on your food, and the disgusting chicken carcass solution you used to rehydrate, this looks hella fire. I'll make one without the carcasses of dead animals, or broths made from carcasses, and crush both miles and congee like an absolute boss.
