    I love this bread and have been making it for 30 years. I like that yours comes out a bit thicker and will try that because mine does not freeze well. Good to see Mom back in action 👍

    I tried out this recipe today and it turned out wonderfull!
    My oven is pretty strong so it is done just in 12 Minutes and i could enjoy it with fresh hummus. Thank you Blanche for sharing such lovely dish.

    From my Personal experience with making pita bread using bread flour ' King Arthur ' brand works a lot better than all purpose flour. It didn't come out as good as when I used bread flour. Plus I do the same thing I always have homemade whole wheat and white pita bread in my freezer when I run out I make more. I Rarely buy pita bread.👍🏼👍🏼☺️

      Yes King Arthur is tops if you can get your hands on it for sure! We just used unbleached flour for this since it's all I could find ;)

      BlancheTV loved your recipe learned something new for sure that I dont normally do in bread making.which Is I usually cook it in a pan cuz once I tried it in the oven and it didn't come out good. It was crispy and not the right texture for pita.With your oven temp I'll try it. thank you

    "Don't get dead yeast", "Like babies butt"... LOL, Good ones. We had tahini and molasses as snacks with tea in the middle east. Kept us warm during winter.

    Thank you, I will bake it with my kids! yes I do remember dibes with tahini though I didn't grow up in the Middle East.. but once I ate it with Dibbes Ruman (pomegranate molasses) and it's delicious, too! Have you ever tried using whole grain wheat? Or mixed? I do like adding more fiber.

      If you do decide to use wheat flour, there are things to consider, one is you will have to rest the batter longer. This will give the liquid a chance to hydrate the bran and the germ and soften it first. Also as you knead the dough, you might have to add more water. Add water a tablespoon at a time until you get that nice soft dough. Also, make sure to sift the flour first before using for a lighter texture. Hope that helps!

    Helllo! I love your channel and I made this recipe yesterday and it came out well but 15 mins in the oven was a bit too much for me and it came out a little overbaked.. 10 mins worked well..

      Thanks for trying and for your feedback! Yes where it gets tricky is the strength of each oven. I must admit my oven is on the weak side, so it sounds like your oven is powerful (which is a good thing!)

    What type of flour did you used? There are numbers in the packages of flour which tell us something about gluten, which brand do you recommend us to buy?

      I like Italian Caputo flour, or Francine flour from France.

    Made it, came out well except no pocket.... any ideas?

      Best to let it rise more, put a towel over it after you roll it and let it sit more. This will allow the dough to rise more (creating that pocket effect) Another fix is maybe there was slightly too much water in the dough. If the dough is too sticky it won’t separate into a pocket while baking. Every flour can yield different results.

      Yes there is date molasses and it is delicious too! I love the grape one because it has a sight tartness, whereas the date molasses is sweeter. =)

      HI welcome to the channel! To make a gluten free bread that would work the best, I recommend using a high quality gluten Free All Purpose Flour, like Kind Arthur. It might not turn out exactly the same, but come close. Gluten free flours also don't brown as well in the oven, so be cautious not to over bake the bread. Hope that helps!

    Girls really love Middle Eastern cuisine! I did try today making pita bread by your recipe, and pita comes brittle very dry 🙁. I did follow your recipe, what could go wrong?

      Check to make sure the yeast is fresh. Make sure to let the dough rise after every step--helps to cover the dough with a damp towel during this process. Did you add extra flour while kneading? Are you overbaking your bread? Baking bread for too long will cause your bread to lose moisture which will dry it out. Be sure that you are following the time directed closely. And remember, every oven is different and will cook at a different temperature. You can test your bread by tapping it at its base; if you hear a hollow sound, it’s probably done. Another reason why your bread might be dry is that you did not knead it enough. When you don’t knead your dough enough, it will be crumbly. So make sure that you knead until your dough enough. You know it is enough when you stretch it out until you can get it paper-thin without tearing it. Can you see the light through it? If so, it is ready.
      Baking bread is a science, the more practice you get the better it will be. It is hard getting it right from the first time.

    I made this and followed to a t but my bread came out puffy but hard. Did I cook it too long?

      There are a lot of factors that can cause the bread to be hard, namely:
      1) Over kneading
      2) Using older yeast
      3) Not letting the bread rest at least 20 minutes (covered) between every single step
      4) Using too hot water for the yeast
      There is also the type of flour used. Perhaps you can try bread flour instead of all purpose flour. I personally like to use Italian Caputo Flour or French Francine flour.
      The oven temperatures can vary--what temperature did you use?

    Why do some people add powdered milk to recipe

      In this recipe I stayed true to the original rustic Palestinian recipe my great aunt would make. Milk or milk powder is a way of enhancing the dough to make a softer loaf (due to the milkfat acting as a tenderizer by interfering with gluten production) Milk powder can also add flavor to the loaf or enhance browning of the crust due to the potential carmelization of the milk sugars.

    I guess I suck because it wasn’t fool proof and I’m a fool lol. What do you think I did wrong that mine didn’t get a pocket. I followed the recipe and the dough rose really well. I let it rest everyone you said to let it rest. What did I do wrong. Help!!!!

      First of all...you NEVER suck. Bread is really tricky. It is super important to let the bread rise a long time between steps, use fresh yeast (check expiration date). Also make sure the water you mix with the yeast is warm, not too hot, not too cold. Make sure the oven is adequately preheated. Hope this helps!
