Smoked Creamy Chicken and Veggie Casserole on the Pit Boss Pellet Smoker

  • My favorite smoked casserole dish! Delicious!
    3-4 lbs. boneless, skinless chicken breast
    1 teaspoon kosher salt
    1/2 teaspoon black pepper
    1 teaspoon Garlic Powder
    1 teaspoon Paprika
    1 teaspoon Italian seasoning
    1 stick butter
    1 cup milk
    1 family size can cream of chicken
    4 oz. regular plain cream cheese
    1/2 cup shredded cheddar cheese
    1.5 bags of penne noodles
    Mix all ingredients in a large casserole dish, place in smoker for 2-2.5 hours at 225 degrees. Cut veggies, cook, and add to other ingredients.
    Stir periodically.
    Remove dish and remove chicken to shred and then mix back in
    Soften noodles and add to chicken and other ingredients. Mix well. Coat with shredded cheese and cook for 30 minutes.
